Peanut Butter Cookies (No Added Sugar)

Peanut Butter Cookies with no added sugar.  I wanted to make my flourless peanut butter cookies the other day, but I was out of maple syrup.

I did have some dates on hand, so I decided to make a date paste and use that. It worked great! So of course I wanted to share the recipe with you all as well.

2 Ingredient Almond Butter Cookies

The other day, I attempted to make a caramel almond butter, but had some difficulty with my blender.  So I turned the recipe into these 2 Ingredient Almond Butter Cookies.  They are delish!

This healthy cookie recipe contains ZERO added sugar.  They are even healthy enough for breakfast.  Yay!

2 Ingredient Almond Butter Cookies

This recipe happened by accident.  I was trying to make a caramel almond butter, but the whole mixture seized in the blender.  So I decided to change it up and make these no bake cookies instead.  I think they came out great.

If you love dates stuffed with almond butter, then this recipe is right up your alley.  It’s vegan, gluten free, grain free AND paleo.  I used salted almond butter in my recipe.  If you use unsalted, you may want to add some sea salt to the recipe.  I love the sweet and salty combo.

Chocolate Coconut Quinoa Cookies

I think these cookies are healthy enough for breakfast too.  The quinoa flakes and nut butter add a nice amount of fat and protein, keeping you full for a while.  If you don’t want to use quinoa flakes, you can use quick oats instead.

This recipe is also easy to make nut free by using sunflower butter.  I imagine it should work out just fine.  These healthy cookies literally took 5 minutes to whip together too!

Healthy Trail Mix Cookies

The other day I had some ripe bananas to use up so I created these Healthy Trail Mix Cookies.  These cookies easy to make and they are filled with good for you ingredients!  They also happen to be nut free IF YOU USE ANOTHER MILK so they are perfect for school lunchboxes.  It’s like eating granola in cookie form. They would be great to take on hikes too.

From start to finish, these cookies are done in under 25 minutes!  Can’t beat that! In addition to being nut free, these healthy cookies are also vegan, gluten free and refined sugar free.  Yay!  They make the perfect afternoon snack.

Another way to punch up the flavor in these cookies is to add a little cinnamon.  I am definitely trying that with the next batch!

We are in full holiday baking season now.  So it’s the perfect time for me to share these Coconut Vanilla Meltaway Cookies.  They are divine and simply melt in your mouth.  One of the best things about this recipe is that it only calls for 4 simple ingredients!

I used REBBL Vanilla Spice Protein Coconut Milk  for this recipe. I love that the protein is sourced from peas, pumpkin and sunflower seeds.  Most protein drinks contain processed ingredients.  Not only are REBBL drinks delicious, but they contain none of the bad stuff.  That’s right, REBBL drinks are organic, fair trade, made from real ingredients and full of super herbs like ashwagandha, reishi and maca root.
