These slow cooker gingerbread oats are vegan and gluten free.  You can make them with either water or milk.  I chose water for mine.

This is very budget friendly and makes a lot.  Make it up on a Sunday and have breakfast for the entire workweek. My husband takes it to work every morning.

I used pecans in the bottom crust layer, and they really go fantastic with the apples and cinnamon.  Slow cooking the apples first allows much more natural sugar to develop, so there is not too much need for a lot of added sugar.

This is absolutely delicious topped with some coconut whip cream.

This Chocolate Pumpkin Mousse is so decadent, no one would ever guess it was made healthier.  Since everyone is all about the pumpkin recipes this time of year, I created another one for you. Chocolate and pumpkin make the best combination ever.

All you need is 4 simple ingredients and just a few minutes.  I just love recipes with small ingredient lists.

This healthy pumpkin mousse is vegan, gluten free and paleo.  There is very little added sugar.

I topped mine with chocolate chips, but you can definitely eat it plain too.  This would also be a great frosting recipe.

Mini Apple Pies

OMG you guys!  You are in for a treat.  These Mini Apple Pies are epic and perfect for Fall. They best part is they are completely free of refined sugars, grains and flours!  The base I used is the same one in my Lemon Coconut Cookie Cups.  It worked perfectly.  I love that these are perfectly bite sized for portion control.

Chocolate Pumpkin Loaves (Vegan and Gluten Free)

Chocolate Pumpkin Loaves.  I have many pumpkin recipes, but I haven’t made a chocolate pumpkin recipe until now.  My husband is a huge chocolate fan, so these chocolate pumpkin vegan loaves were right up his alley.

I am not that into chocolate (gasp!), so I prefer the eat my regular pumpkin muffins.  These got his stamp of approval though!

If you want to boost the chocolate flavor even more, you can add in some dark chocolate chips.
