Have you ever had a chocolate turtle pie? It’s a decadent chocolate filling topped with caramel and pecans. One of my favorite combinations. Something about rich chocolate and pecans is so delightful and comforting this time of year when the weather gets cooler. I love to cozy up on the couch under my warm blanket and savor something chocolatey after the kids have gone to bed. Because #mommyneedschocolate 😉

Soft Baked Iced Gingerbread Cookies

Disclaimer: This post is sponsored by Pamela’s, but all opinions are my own.  Thank you for supporting the brands that I love.

If you love gingerbread cookies, you have to try these Soft-Baked Iced Gingerbread Cookies!  They are perfect for holidays and very easy to make.  I used Pamela’s grain and gluten-free nut flour blend.

One thing I really love about this nut flour blend is that there are no added ingredients.  Typically, gluten free flours often contain xanthan gum or guar gum.  Pamela’s has neither.  The only ingredients in this flour blend are: almond flour, coconut flour, pecan flour and walnut flour.

Peanut Butter Cup Cookies

I love baking around the holidays. Peanut Butter Cup Cookies are one of my favorite holiday cookie recipes.  Before this Whole Food Life, I used to do a lot of traditional baking.  However since that time, I have tried to modify those traditional recipes to make them a bit healthier. I hope you enjoy my version.

Chocolate Almond Butter Mousse Pie

Calling all nut butter lovers!  This Chocolate Almond Butter Mousse Pie is a must try! It starts with a date-sweetened almond pecan crust.  Then it’s filled with a luxurious almond butter chocolate mousse.  This pie may have a few steps to make it, but it’s completely no-bake and very simple despite the long instruction list.  It’s worth every minute.

This pie kind of reminded me of my chocolate mousse pie.  It’s also similar to my chocolate pumpkin mousse pie.  You really can’t go wrong when you are talking about any chocolate mousse!

This rich and creamy pie is no-bake, vegan, gluten free AND paleo approved!  So it’s basically for everyone and needs to be a staple at your holiday dessert party.  Trust me! I hope you enjoy it as much as we did!

If you need a nut-free version, you can make the crust out of sunflower and pumpkin seeds and then use sunflower butter in the filling.  Another great idea would be to sprinkle some coarse ground sea salt on top.  Yum!  I will be trying that next time for sure!

Pumpkin Chocolate Mousse Pie

Tonight I am going to a dinner party, and I was asked to bring a pumpkin dessert.  That is how this pumpkin chocolate mousse pie came about.  It’s got a chocolate pecan crust, a rich pumpkin mousse for the filling, and a chocolate drizzle on top.  So yum!!

You can tell by the picture that I may have gone a little crazy with the chocolate.  I’m sure the guests won’t complain!

This healthy pie may look fancy, but it’s super simple to whip up!  There is actually no baking required.  You can make it ahead of time and pull it out when you are ready to eat.  It happens to be vegan, gluten free AND paleo approved!

This pie would be a great dessert for Thanksgiving as well.  It’s a great alternative to traditional pumpkin pie and great for chocolate lovers! Since there is no baking required, making this leaves the oven free to cook all those yummy Thanksgiving eats. I hope you enjoy it!
