Almond Joy Waffles (Vegan, Gluten Free)

Almond Joy Waffles.  Sundays at our house have a morning tradition of waffles or pancakes.  Lately, it has been waffles.  I think my older daughter really looks forward to it.

We used to do pancakes in my house growing up and I loved it. Today, I made some Almond Joy Waffles.

To get things going quickly in the morning, I mix all the dry ingredients the night before.  That way, it’s just as quick as store bought pancake mix, but much healthier!

I wasn’t really a fan of the Almond Joy bar growing up.  I have grown  to love all things coconut now.  My husband, on the other hand, loved them so I knew he would enjoy these.

Prep Time 10 min Cook Time 10 min Serves 4 large waffles     adjust servings



  1. Turn on your waffle iron so it can heat up. 
  2. In a medium bowl , mix the dry ingredients. 
  3. In a large bowl , mix the wet. 
  4. Add wet to dry and mix just until combined. 
  5. I scooped about a 1/2 cup amount of batter onto my waffle iron , but everyone’s is different.  I got 4 large waffles out of my batch.  If you are feeling extra frisky, you can top yours with some chocolate chips as well!

  1. I have seen you talk about flax egg substitute several times. Where do you buy these and are they completely egg free? My son is highly allergic to eggs, so he misses out on quite a few things that I make with eggs.
    1. If your son is allergic, a flax egg substitute would be perfect! I am vegan and don't eat eggs so I use it. All you do is take 1T flax meal + 3T warm water, whisk it together and place in the fridge for a minute. It will get gummy, just like a real egg. Works great as a substitute for vegans and those with egg allergies.
        1. It's not going to taste just like an almond joy because it's healthy. The flavor reminds me of almond joy though.
  2. Sorry, I meant as far as using a flax egg vs. a regular egg. When you've used a flax egg in recipes, is there much of a difference in taste?
  3. wow! thanks for the awesome tip for the flax meal egg replacement ***so excited to try this*** being vegan there have been so many times that i have wanted to try a recipe but to be honest the egg part trips me up. I know I can either A) forgo the egg or B) use applesauce or something else but I really want something that takes the place and does the job of binding so THANK YOU
  4. We got our waffle maker yesterday, so I had to try it out this morning. I made these but eliminated the coconut and almond butter (since I didn't have them on hand) and replaced the almond extract with more vanilla extract and WWW with WW flour. It made a great base for your basic waffle recipe and it turned out great!
  5. Hi These look delish! I'm sure that the almond butter in them makes this rich and hearty! I have an observation, if you are interested. I make nut waffle similar to this recipe, and it calls for a couple of tablespoons of sweetener-- either apple juice concentrate or honey or agave nectar. Anyway, when I leave the sweetener out, the waffles are lighter in color, like yours. When I add the sweetener, the get a more golden brown color, which is interesting and lovely. I wonder why a sweet ingredient has that effect-- but I like it!
  6. Just made these for breakfast! I added a bit of cocoa powder to make these a little chocolate-y, and I made pancakes instead of waffles. They were a-mazing! I wonder if I reduced the amount of almond milk just a tad if these would make really good morning muffins.
  7. Do you think using all GF oat flour to replace the white whole wheat flour would work? I've noticed since eliminating all gluten products, I am feeling much better, with better digestion and no bloating or gas. BUT, I am still wading through the murky waters of baking and such with gluten free only. Thanks!
  8. I used whole wheat flour & dairy milk. The batter was VERY thick, but I went with it, and it cooked up just fine. I got 8 waffles from the batch. I took a small dark chocolate bar to my micro plane grater & made a chocolate "dust" to sprinkle on these, then we topped with a bit of real maple syrup. Oh so good! Thank you!
  9. I made these for breakfast this morning and they were a huge hit with my kids (3 & 5yr). Instead of oat flour, for 3/4 of the recipe I used gluten free flour (from trader Joe's) and 1/4 was oatmeal (straight up, not ground). Instead of coconut oil I used coconut butter. The kids loved the sprinkle of coconut with a couple of chocolate chips on top. My husband found out he has cancer in December and a naturopath suggested he give up gluten & sugar. Your recipes have been so helpful! His waffle will get a sprinkle of cocoa nibs & coconut flakes. :)
