Apple Cinnamon Waffles. Every weekend we try to make waffles.  You can never have too many healthy waffle recipes.   Today we made healthy apple waffles with lots of cinnamon!

We usually make Blueberry Oatmeal Waffles or Strawberry Banana Waffles.  The last couple months, my daughter had soccer early in the morning, so we had to rush out quickly with no time to make waffles.

This past weekend, we were finally able to again.  My daughter requested apple cinnamon waffles, so here you go.

You can use all white whole wheat flour if you want.  I just like to mix it up with some oat flour.  This recipe is super easy and could probably be easily converted into pancakes as well.

It will make your house smell amazing too!  I always make a big batch and then freeze some.  Then you can easily pull one out and toast it on those busy mornings!

Prep Time 10 min Cook Time 10 min Serves 5-6 waffles     adjust servings

Ingredients

Instructions

  1. Preheat your waffle iron
  2. Mix all the dry ingredients in one bowl. 
  3. Mix wet in another. 
  4. Add we to dry and mix until combined. 
  5. Using a 1/2 cup scoop, spoon mixture onto a greased waffle pan. 
  6. Repeat these steps until all are made.  I got 5-6 waffles out of my batch.  Enjoy!

Peach Fruit Leathers

We got a bunch of peaches in our co-op basket this week.  I though about doing some ice cream or cobbler, but at the last minute I decided to make peach fruit leathers.

Fruit leathers are really easy to make.  Much cheaper too!  I used my dehydrator to make these peach fruit leathers, but you can make them in your oven as well.  I just love the dehydrator because it quietly runs and I can even leave the house with it on.  It also doesn’t heat up the kitchen.  This is so easy, it’s almost silly to call it a recipe.

Prep Time 20 min Cook Time 7 hr Serves 10 fruit rolls     adjust servings

Ingredients

  • 5 peaches
  • 1 T honey or maple syrup (optional)

Instructions

  1. If using an oven, preheat it to 150. 
  2. Cut and pit all the peaches. I left the skins on, but you can also remove them if you want.
  3. In a food processor or blender , mix the peaches into a smooth puree.  Take a taste. 
  4. If the mixture is on the tart side, add a small amount of sweetener. 
  5. If you are using the oven, spread the mixture onto a parchment lined baking sheet.  Make sure it’s as even as it can get. 
  6. Bake for about 7 hours or until the mixture is a bit tacky.  I kept checking on mine to see how easily it could pull away from the parchment. 
  7. I also line my dehydrator trays with parchment. 
  8. Set the dehydrator on 150 and run for about 7 hours.

Almond Butter Chocolate Overnight Oats

This Almond Butter Chocolate Overnight Oats is the ultimate indulgence in your daily breakfast.  The best part?  It’s totally healthy!

Yes that’s right. This healthy breakfast is made with good for you ingredients like almond butter, cacao powder and steel cut oats.

This is one of the easiest breakfasts you can make yourself.  I make 5 at a time and eat them all week.  My husband even takes them to work with him.  They travel very well.  Between the chia seeds and the cacao powder, you are getting a lot of antioxidants.

Also a lot of protein and fiber!  This will keep you full until lunchtime.   If you don’t know what cacao powder is, it is chocolate in it’s most raw form.

It can be bitter, but it’s so good for you.  I usually put a chopped medjool date in my oatmeal and it turns into a caramel overnight.  It gives just a hint of sweetness.  You can also use maple syrup.

My recipe makes a thicker oatmeal. If you like yours thinner, just add a bit more milk. Take out in the morning and enjoy. I eat mine cold right out of the fridge. You can also try my Overnight Oats in a Jar.

Watermelon Mint Popsicles

When I think of summer, one of the first things that comes to mind is watermelon.  How awesome is a fresh slice of watermelon, right?  It reminds me of being a kid again.  I have already done a watermelon punch , so why not do some popsicles too!  These watermelon mint popsicle are perfect for a refreshing treat on a hot summer day. And who doesn’t like a good watermelon popsicle recipe?

My kids are loving these popsicle molds by Tovolo.  One of the things I like best about the molds, is the drip catch.  Perfect for my kids, who tend to eat these slowly.  Do you have them too?  If not, you should get some.

Prep Time 5 min Serves 6 popsicles     adjust servings

Ingredients

  • 4 cups watermelon
  • 10 mint leaves

Instructions

  1. Blend both ingredients in a blender for about 90 seconds.
  2. Pour into popsicle molds . They should be ready to eat in about 4 hours. Enjoy!

Pecan Caramel Ice Cream

I love making ice cream. It’s one of those things that looks hard until you try it.  This pecan and caramel ice cream might be one of the best ice creams I have ever made. This stuff is good… I really can’t say enough about this pecan caramel ice cream recipe.

You are probably wondering how I made a vegan caramel.  Dates can make an incredible caramel if you just blend them with a little water.  I love that I can make a caramel with zero added sugar.  I also added very little sugar to the ice cream mixture itself.  This recipe is like my 3 ingredient Peanut Butter Ice Cream.  Just a few simple ingredients is all you need.

    For the caramel

    For the ice cream

    Instructions

      For the caramel

      1. In a blender or food processor , blend up the ingredients for the caramel.
      2. Set aside.

      For the ice cream

      1. In the ice cream machine , add the ingredients for the ice cream, except the pecans and turn on the machine.
      2. After about 5 minutes, drizzle the caramel mixture into the ice cream bowl.
      3. When the ice cream looks like it’s almost done, add in the nuts.

      Asian Slaw

      I have been wanting to so an Asian slaw for quite some time now.  This week, we had some leftover red cabbage and I took that as a sign.  What we came out with was so good!

      This Asian slaw would be great in some spring rolls, or in an Asian wrap with your favorite protein.  It is definitely a dish that will be made often in our house.  Just today, I added some cashews to it for my husband’s lunch and he said they were amazing on top.  So even though it’s not pictured, I will add it to the recipe. 🙂 This is a quick dish that can be made in a few minutes.

      Ingredients

      • 1 head red cabbage chopped
      • 2 apples diced (I used gala apples, but any would work)
      • 3 carrots shredded
      • 1 tsp ginger minced
      • 1 tsp garlic minced
      • 2 T toasted sesame oil
      • 2 T rice vinegar
      • 1/3 cup toasted cashews
      • salt to taste

      Instructions

      1. Throw the cabbage, apples, cashews and carrots into a large bowl .
      2. In a small bowl , whisk
      3. the remaining ingredients to make the dressing.
      4. Pour the dressing onto the salad and toss.
