No Bake Nut Free Cookies

I know a lot of you have kids with nut allergies.  So I thought I would make a no bake nut free cookie for you.  These are perfect to take to schools that have a nut free policy.  These nut free cookies only take minutes to make and taste super good.  I made them with sunflower seeds.  You can use this nut free cookie recipe as a base and add in whatever extra flavors you may like.

These cookies are not only nut free, but they are gluten free as well.

No Bake Nut Free Cookies

Prep Time 5 min Serves 16 cookies     adjust servings

Ingredients

Instructions

  1. In a food processor , combine the sunflower seeds and oats and blend into a course consistency.
  2. Add in the remaining ingredients and mix until a dough starts to form.
  3. Roll the dough into balls and set them on a parchment lined baking sheet .
  4. Stick them in the fridge to firm up. About 30 minutes.

    1. So glad you liked them! I don't have the info, but I think you can plug the recipe into My Fitness Pal for a rough estimate
  4. Is there anything I can replace the dates with that won't turn off my very fussy 6 year old? I know she will refuse to even try these if there are dates and I'm trying to get her cooking with me. Could i use honey or maple syrup? I hate making food in secret lol
    1. I am not sure if honey or maple syrup alone will work, but you can try. The dates also help bind the cookies. How about using apricots?
