  1. Can I use sunflower seed butter in place of cashew butter to make these nut-free? Or would it alter the taste too much?
      1. My grandson is allergic to cashews. Is there anything else I could use? Would love to make these for him and my vegan son.
      2. So I saw this post today and really wanted to make something with my daughter. We usually make something on her non-school days, but with a new baby in the house, just running to the store isn't as easy. I only had about 1 cup of honey roasted cashews and no other nuts. However I had a whole bag of sunflower seeds. I decided to mix what I had and make a cashew/sunflower seed butter. I followed the rest of the recipe and they turned out so yummy!!! I don't know if they would taste as good without any cashews but I can sure taste the sunflower and it is still great!
  2. You're killing me with all these AWSOME recipes. I've been making so many lately that I have such a selection of sweets at my fingertips! Unfortunately I tend to grab one here n there all day and then pig out a lil at night!!! I just put everything in the freezer today so it would be a little harder to pick. I actually love that I have so many options now, I just have to control myself!!! Thanks for all you do and continue to do!!!
  3. They came out way too flaky and I couldn't take a bite of it. The cookie "dough" did not settle down to get flat like yours in picture. Followed step by step. :( could it be because I used dry roasted cashew butter?
    1. Sorry that happened. Did you let them completely cool before removing? I noticed when I tried to pick them up while they were still warm, they fell apart. But once they were completely cooled, I had no issue with it. Maybe it was the dry roasted butter? I'm not sure. I made cashew butter from raw cashews.
  4. I'm guessing maybe it's because it was dry roasted cashew butter. The ones I cooled off completely stayed together a little better. :) I will try again with raw cashew butter. Thanks! Love your blog!
  5. Totally unrelated to the recipe (which btw looks AMAZING!) but I was just wondering if you have had any experience using date sugar as a sweetener? It sort of resembles coconut sugar in terms of appearance. I bought some the other day out of curiosity and have yet to find a recipe that I can use it in.
  6. The cookies turned out amazing I will be sharing them with my co- workers cause if I don't I will eat them all :)) thanks for sharing your recipes and I can't for the cookbook to come out...
  7. Cashew butter was genius! So yummy! Only, the bottoms of mine got badly burnt. It is not deterring me from eating them, though. Still perfect! My oven is very old and probably needs to be replaced. :( awesome recipe! Definitely a keeper!
  8. These look amazing!!! I can't eat gluten, and I run out of gf flour so quickly, it's great to find flourless recipes like this. I will be trying them :)
  9. I just made a batch of cookies very similar to these with almond butter. My son is allergic to many nuts but not almonds, so I am able to use almond butter in cooking and baking. They came out great! You do need to let them cool before trying to move them or they will fall apart, as Melissa said. I imagine most nut butters will work, you just might have to change the amount to get the right consistency.
    1. I am so glad you liked them with almond butter. I had another reader also enjoy them with sunflower butter, so that may also be another option for you in the future. :)
  10. Hi! My husband and I are addicted to these delicious cookies! He has been asking me to make more ever since I made the first batch last week. I just had to tell you, though...that I searched your site with the keyword "cashew". I completely forgot what they were called but since we ground up raw cashews to make cashew butter, both my husband and I were certain they were "cashew" cookies of some sort. I even started searching the internet, thinking I was wrong in looking on your site. I may be the only one who feels cashew should be in the title (or these particular cookies as part of the cashew search) but I thought I'd maybe suggest it. :) Thanks for another awesome recipe!
    1. Glad you like them! I think I tagged these with cashew so they would come up in the search. IF not I will. :)
      1. Thanks. :) Was just a suggestion. My 5 year old and I are making more of these right now! And going to try the almond butter version that everyone keeps talking about. Annnnd....will try your chocolate donuts next!
  11. Hi, I just came across your site and have booked marked it for future reference!. I did have one question about the amount of cashews in this recipe, I've always been told they are pretty much the fattiest of the nuts. Whats the calorie content like on these?
    1. I don't count calories, so I don't know. You can probably look up the calories by going to www.caloriecount.com. I used to count calories, but once I quit processed foods and sugar, I had no need to. It was pretty amazing to figure that out. :)
  12. My mother and I made these today and they are absolutely delicious!! thank you so much. My only question is that they turned out somewhat flaky and fall apart when you pick them up. any suggestions on how to make them stay together more? Thanks. these are so so good!!!!!
    1. Glad you like them! I noticed when I tried to pick one off while they were still warm, they fell apart. However, when I let them cool completely, they held together just fine.
