Flourless Salted Caramel Chocolate Chip Cookies

Omg!  You guys!  These flourless salted caramel cookies are amazing!  I know I have said that with my 4 ingredient flourless chocolate cookies and my flourless chocolate chip cookies as well.  These flourless salted caramel chocolate chip cookies take it to the next level.  Can you believe they have zero added sugar?

Yes you heard that right.   No added sugar.  You see, these cookies are naturally sweetened with dates. These salted caramel chocolate chip cookies are also vegan, gluten free and grain free.

Flourless Salted Caramel Chocolate Chip Cookies

Flourless Salted Caramel Chocolate Chip Cookies

Prep Time 5 min Cook Time PT9-10M Serves 8 cookies     adjust servings

You will never guess these cookies are flourless with no added sugar!

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Drain the dates in the water.
  3. In a small blender combine the dates, sea salt and 2 T new water and mix until a caramel starts to form. If you need to add a little extra water, that is okay.
  4. In a food processor , mix the cashew butter, vanilla and baking powder together.
  5. Add the caramel to the cashew butter mixture and pulse a few times.
  6. Lastly add the chocolate chips and pulse a few more times.
  7. Drop cookies onto a lined baking sheet . I used a cookie scoop and got 9 cookies.
  8. Bake for 9-10 minutes.
  9. Wait until the cookies are completely cooled before removing them from the baking sheet.
  10. Store cookies in an airtight container in the fridge for up to 2 weeks. You can also freeze them for longer.

**You can buy cashew butter at the store, but you can also make it yourself in a food processor or high powered blender. Just take 2 cups raw cashew pieces and blend them for 5 minutes. Feel free to use another nut butter or even sunflower butter in place of the cashew butter, but keep in mind it may alter the flavor slightly.

Just wanted to ask you if you noticed that the Dates that you link to Amazon Shop are cross processed in a plant with wheat...Having a Celiac Hubby, I can't use these dates...I was wondering if you had another source that is Certified Gluten Free?     1. Oh no! :( Can you find them at your local health food store instead? I know even Costco carries them now.
      1. We have one little tiny health food shop here, and they don't carry much, and what they do carry is really expensive. No Costco, only a Sam's, and they are just now starting to sell Coconut Oil, and Maple Syrup as well as Agave. I live 200mi from any large city :) aka in the middle of nowhere!! But I'll give our shop a try.....maybe they can point me in the right direction. :) Love your recipes, and just tried the Overnight Oats...Yummy!! :)

  5. These are delicious! I just made a batch! Top notch, in my book. And they must be done with cashews to get that super chewy cookie texture. I made your other flour less cookie recipe with almond butter and a little but of peanut since I ran out and they were super dry and crumbly. Cashews rule! Love this recipe!

  7. What is baking powder used in this recipe and not in the flourless toasted coconut caramel cookies? I was going to leave out the chocolate chips then seen the other recipe and thought I would leave out coconuts but seen the difference was baking powder. Curious to know why.

  9. These are so good!!!! I had to make a change due to allergies so I thought I would tell what I did, I put raw sunflower seeds in the food processor, but I learned tonight that raw sunflower seeds do not make sunflower butter, roasted ones do. Since I had sunflower powder, I added tahini to the powder and I had a butter like consistency to use in this recipe. It tasted great! The only thing is I thought they were wonderful right out of the oven, nice and gooey! They are also great cooled. Thank you, Melissa!
  10. This look great! I am assuming that the baking powder is what causes them to rise in the oven. I am Raw Vegan so I think I'll just leave the baking powder out and I should be good to go in even less time. Thanks for the awesome recipe! It is great to see these healthy foods!

  12. These taste really great, but they looked awful!! They completely spread out and the edges burnt, and they were really crumbly... what did I do wrong? (I ended up using the crumbly bits as "granola" to top my yogurt, so not all was lost)
    1. I'm sorry that happened. Do you think they were over mixed? Did you wait until they were completely cooled before removing from the pan?
      1. Hmm... maybe overmixed, not sure... I was also thinking that maybe there was too much water in the caramel sauce? I did wait 'til they were completely cooled before removing, but it didn't really help... the way they came out of the oven, they spread out really far, so there wasn't much cookie left to salvage! Oops.
