Chocolate Strawberry Chia Pudding

Have you tried chia seeds? If not, you need to try this Chocolate Strawberry Chia Pudding!   Those little seeds are packed with protein and fiber.  Not to mention healthy fats. Chia pudding is a very common way to get them into your diet.

I already have a coconut vanilla chia pudding on my blog, so I thought I would add a chocolate chia pudding to the list.  Chocolate and strawberries go so well together, don’t they?  If you like this chocolate strawberry chia pudding, you may also like my strawberry creme truffles.

  1. Mix all the ingredients together in a large bowl. Make sure you mix very well because the seeds have a tendency to clump at the bottom.
  2. If you want to make it extra chocolaty, you can add 2 tablespoons cocoa or cacao powder to it.
  3. Store in the fridge for 3 hours to set.
  4. This should last 4-5 days in the fridge. Enjoy!

  1. Use Chia seed all the time....Just one question, can you make this receipe without the coconut or can you substitute something else.....
  2. This pudding sounds wonderful, but for me it would be calorically out of the ballpark. I will have to play with the recipe to see if I can adapt it to my needs - I'm always interested in chia recipes, and this one sounds like it's well worth finding a way to eat it.
  3. I made this tonight & it was delicious! I substituted vanilla extract for the beans and it turned out well. I'm really excited about your cook book!!! Congratulations:)
    1. I am sorry, I don't know those, but you can figure out a rough estimate by going to www.caloriecount.com
  4. Melissa, I just have to tell you that your blog is the only one I could stay on for hours upon hours. I've tried several of your recipes, including this one just tonight, and they are all so easy to follow. Thank you so much for making it easier to eat healthy! And they all taste delicious!!
  5. I finally made some chocolate chia dessert pudding--I ground the seeds first in the vitamix for a creamy pudding texture. I used the chia seeds, almond milk, cocoa powder, and honey and just blended it together in the vitamix and poured it up and let it set up. It is just like the box stuff only hopefully healthier. And way easier than cooking chocolate pudding from scratch. I am so glad you shared this recipe! Thanks for the inspiration =) Maybe I will put some in freezer popsicle containers like someone mentioned. I am also imagining chocolate pie with whipped coconut topping kind of like chocolate silk pie.
