Peanut Butter Chocolate Chip Larabars

Peanut Butter Chocolate Chip Larabars.  I had a reader request a recipe the peanut butter chocolate larabar.  Since I love all things larabar, I wanted to make them asap.  They came out great!  I still love the Coconut Cream Larabar the best, but this one is pretty good too.

These healthy bars are no bake and super easy.  They freeze well too, so feel free to double the batch!

I am more of an almond butter girl myself, but my husband LOVES peanut butter so I know that these will be gobbled up fast.  I may try a second batch with almonds.  I love recipes like this because they are just so easy.

Peanut Butter Chocolate Chip Larabars

Prep Time 15 min

Ingredients

Instructions

  1. In the food processor , blend the peanuts and salt into a powder.
  2. Pit the dates and add them in as well.
  3. If needed, slowly add a bit of water to help the mixture come together.
  4. Once the dough is formed, line and 8×8 glass baking dish with parchment paper leaving enough room for some paper to stick out the sides.
  5. Carefully, spoon the dough into the pan evenly. The dough will be very sticky and you may need to wet the spatula a bit.
  6. Using the extra paper, pack the dough down until it is flat and even.
  7. Place in the fridge to firm up.

I store them in the fridge. They should keep at least a week if you can get them to last that long!

Key Lime Larabars (Vegan and Gluten Free)

Key Lime Larabars.  I had a reader request a key lime larabar recipe.  I have got to say that I like these a lot.  I am not really a fan of key lime anything, but these little bars are good!

They reminded me of the Coconut Cream Larabars, which are like crack and also my favorite.  These larabars are so easy to make.  How can you not try them when they take only 5 minutes?

The taste of lime comes out real nice in the finish.  It’s a subtle taste.  I only used the juice of 1 lime, bit you can add more if you like.  Now I have one question.  Is there any flavor I am forgetting about?  I thought maybe the blueberry flavor.

  1. Process the cashews, coconut and almonds until they are a fine powder. 
  2. Then add the dates and lime juice until a dough forms.  If the dough looks a bit dry, you can add a few tablespoons of water to help it come together. 
  3. Line an 8×8 baking dish with parchment leaving enough room for some to come out the sides.
  4. Spread dough into the the dish.  It will be very stick and you may need to wet a spatula to help you. 
  5. Once the dough is evenly spread, press it down with your palms using the parchment paper. 
  6. Place in the fridge for a few hours to set.

Homemade Pecan Pie Larabars

Yes!  Homemade Pecan Pie Larabars is what today’s post is about.   I just can’t seem to get enough of them.  The Coconut Cream is still my fave larabar recipe, but these pecan larabars are very tasty as well.

They are also no bake and take a few minutes to throw together.  This is my kind of recipe. Vegan, gluten free and paleo too!

They taste just like pecan pie with none of the guilt!  Feel free to have two, or three.  No added sugars in here.  They get their sweetness from dates.

Nature’s candy.  Yum!  Warning….these are addictive.  These larabars are also gluten free and grain free!  I hope you enjoy them as much as I do!

Prep Time 10 min

Instructions

  1. Blend the pecans and the almonds in a food processor until they are fine.
  2. Then mix in the dates.
  3. The nuts will release their natural oils so there is no need for water. If yours looks a bit dry, you can add a tiny amount, but I didn’t have to.
  4. Line an 8X8 pan with parchment ,
  5. leaving enough room for some paper to stick out the sides.
  6. Press the dough evenly into the pan.
  7. Once it’s spread out, use the extra paper to press the dough down with your palms so it’s packed well.
  8. Stick in the fridge to firm up. About 2 hours should be good. 
  9. Once it’s chilled, cut into squares with a pizza cutter .

These Coconut Cream Larabars are where it’s at. No matter who you talk to, most everyone seems to love larabar,  My two most viewed posts on the blog are the Peanut Butter Granola Bars and the Homemade Clif Bars.

The first larabar recipe I created was the chocolate brownie.  I think these healthy larabars came out even better!

These literally took about 5 minutes to make.  Can it get any easier?  I love recipes like this.  The store bought Larabars cost $1.50 a piece.  That can get pretty pricey if you are buying a lot of them.  So here is my recipe.  I hope you like it as much as we did.

Instructions

  1. Mix the almonds, coconut and cashews in the food processor until fine.
  2. Then add the dates, oil and water and pulse until a dough forms.
  3. Line an 8X8 pan with parchment paper leaving enough room for some to come out the sides. That way, the bars will be easy to remove and cut with a pizza cutter.
  4. Press down the down so that it is packed well and place in the fridge to set.
  5. It will take an hour or two. Slice and eat. These should keep in the fridge for a couple weeks.

Coconut Date Bars

I have been having a love affair lately with all things coconut.  It is just so yummy!  So, I am sharing another delicious coconut creation that was inspired by my Coconut Strawberry Muffins.  These are my Coconut Date Bars!

For these I used chickpea flour again.  After I made my Strawberry Coconut Muffins, I thought the dense texture that the chickpea flour produces was much more suited for a brownie/bar type recipe.  So here goes.

Prep Time 10 min Cook Time 20 min Serves 9 squares     adjust servings

Ingredients

    For the bars

    Instructions

    1. In a small food processor or magic bullet , mix the dates and water until you get a paste-like consistency.
    2. Set aside.
    3. Preheat oven to 350.
    4. Mix all the dry ingredients for the bars in a large bowl.
    5. Mix all the wet into a medium bowl.
    6. Add wet to dry.
    7. Line an 8X8 pan with parchment leaving enough room for a bit of parchment to come out the sides. This will make the bars easier to remove when cooled.
    8. Spread a thin amount of batter so the whole bottom of the pan is covered. The batter will be a bit sticky.
    9. Once the bottom is covered, spread the date paste on top.
    10. Finish with the remaining amount of batter and place in the oven for 15-20 minutes.
    11. Let the bars cool completely before removing from the pan and cutting.
    12. Once they are cooled, grab the ends of the parchment paper and lift the whole thing out.
    13. Cut with a pizza cutter into squares.
