I made you cookies!  Gluten Free Chocolate Chip Cookies. The other day I shared a Healthier Chocolate Chip Cookie recipe.  They were not gluten free cookies.

It was a recipe I had created a while back.  Nowadays, I am doing more and more gluten free baking, so I thought I would try a gluten free chocolate chip cookie recipe as well.  These healthy chocolate chip cookies came out better than I expected.

No Bake Gingerbread Cookies that are vegan, gluten free and paleo.   As Thanksgiving comes closer, it’s time to think about gingerbread everything.

I am sure everyone is starting to get sick of all things pumpkin these days.  I have been wanting to make these no bake vegan gingerbread cookies for a while now and I’m so glad I did.  They are AMAZING!

These delicious no bake vegan gingerbread cookies are seriously easy to make.  This is a cookie batter that’s safe to eat. These no bake paleo gingerbread cookies are also gluten free, grain free and vegan.  Can it get any better?

  1. In the food processor , grind the pecans. 
  2. Then add in the remaining ingredients and pulse until a dough starts to form. 
  3. Roll into balls and place on a parchment lined plate in the fridge to firm up.

I am obsessing over all things pumpkin.  How about you?  These no bake pumpkin pie cookies cookies are no exception.  They are so good.  My picky 4 year old loved them and she claims to hate pumpkin.  Lol.

These no bake pumpkin pie cookies can be made in minutes with almost no dishes to do after.  This is a super easy recipe you can make with your kids.  These pumpkin cookies are vegan, gluten free and paleo.  Can it get better?  I hope you enjoy them as much as we did.

Prep Time 10 min Serves 12 balls     adjust servings

  1. In the food processor , grind up the almonds, pecans, pepitas and spices. 
  2. Then add in the dates and continue to pulse. 
  3. Lastly add in the pumpkin and pulse until a dough starts to form. 
  4. When the dough is formed, roll into balls and stick in the fridge for 30-60 minutes to firm up.

I rolled mine into balls and flattened then with my palm once they had firmed up. It’s an easy recipe to do with your kids. I got about 10-12 balls out of my batch. Store them in the fridge or even freeze them for longer storage. Enjoy!

Now that it’s September, in my world it’s okay to bring on the pumpkin recipes!  These delicious pumpkin chocolate chunk cookies are gluten free, contain no refined sugars, and are the perfect way to start out the pumpkin recipe season. This healthy pumpkin chocolate chunk cookie recipe reminds me of pumpkin chocolate chunk cookies I use to buy at Smith’s grocery store in Las Vegas.

Prep Time 15 min Cook Time 14 min Serves 15 cookies     adjust servings

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl .
  3. Mix wet in another.
  4. Add dry to wet and mix until combined.
  5. Fold in the chocolate chunks.
  6. Drop cookies onto parchment lined baking sheets and bake for 12-14 minutes.

These cookies are thick and have a cake like texture. I got 15 large cookies out of my batch. I keep them in the fridge so they last longer. You can also freeze them as well. Enjoy!

Grain Free Sugar Cookies

Did someone say sugar cookies? I love sugar cookies. I have also been inspired to do some grain free baking lately, so a grain free sugar free cookie just seemed to make sense.  I have already tried doing some grain free baking with my Grain Free Blondies and my Grain Free Blueberry Tart.  I hadn’t really used any coconut flour though.  So today at Whole Foods, I bought some.  I was so excited to use it that I baked these sugar cookies this afternoon.

I knew they were good as soon as I saw my daughter lick the beater clean.  If you are new to baking with coconut flour, there are some things you need to know.  Coconut flour absorbs a lot of moisture so it’s good to add an egg for every 1/4 cup coconut flour.  I used flax egg replacements in this recipe.  I was a little worried because I have heard that if you use more than 2 flax eggs, it messes up the recipe, but I used 3 and this came out great.
