Oatmeal Cream Pies

There is just something about oatmeal cookies.  Almost everyone loves them!  Myself included.  I know many people are fans of the oatmeal cream pies found in the snack section of your local grocery store.  Well I decided to try a vegan and gluten free version of those! 🙂  Mine are oatmeal cream pies with a maple cream.  They are delicious!

I made mine a little different.  I added a maple cream because I just love maple syrup and they reminded me of the oatmeal cream pies I used to buy from Whole Foods.  They were in the bakery.  OMG so good!  However, I don’t think they were vegan or gluten free.  My recipe may not taste exactly like Little Debbie’s Oatmeal Cream Pies, but they are still delicious.  Oil free and refined sugar free!

Peanut Butter Pie (Vegan and Gluten Free)

Peanut Butter Pie.  I am a huge fan of all nut butters.  My whole cookbook is dedicated to them.  Personally almond butter is my favorite, but my husband’s favorite is peanut butter.

He just loves the stuff.  So I created this super easy peanut butter pie for him as well as you peanut butter lovers out there!

This peanut butter vegan pie has 3 layers. A nut and coconut crust, creamy peanut butter mousse filling, and chocolate ganache on top.

It’s super rich and decadent.  It wouldn’t take much to satisfy your sweet tooth.  Just a small slice will do.

Since this recipe is rather rich and  decadent, I would reserve it for those days when you want to splurge a little.  Not an everyday treat. 🙂

Mixed Berry Parfait (Vegan Gluten Free)

This Mixed Berry Parfait is out of this world.  I have been wanting to do a parfait for a while now.  Who doesn’t like a parfait?

Creamy and delicious with juicy berries in every bite.  Since we are in the midst of spring, I felt a mixed berry parfait was in order.

Omg you guys!  This berry parfait was out of this world good.  If you like desserts with berries, you may also like my strawberry creme truffles or my strawberry tart.

Food photography can be tough sometimes.  Here I thought I was putting everything in so carefully, but it still didn’t come out with the beautiful layers. Live and learn I guess.

I promise you that this mixed berry parfait is delicious!  I made the nuts ahead of time.  If you don’t like pecans, you can probably use another nut in it’s place.

The vanilla bean cream is to die for!  I felt that it really didn’t need any sweetener.  The vanilla beans give it a hint of sweetness.  Also, if you are not a fan of coconut milk, you can probably use heavy whipping cream in place of it.

Lemon Blueberry Cookies (Vegan and Gluten Free)

Lemon Blueberry Cookies.  I have been making cookies like crazy lately.  That is how these blueberry lemon cookies came about.  I have also been combining the flavors of lemon and coconut together quiet often.

After I made my lemon coconut fudge the other day, a reader suggested I do a lemon blueberry cookie.  Genius idea!  I am so glad I did because these lemon blueberry vegan cookies are so good!
