Key Lime Larabars (Vegan and Gluten Free)

Key Lime Larabars.  I had a reader request a key lime larabar recipe.  I have got to say that I like these a lot.  I am not really a fan of key lime anything, but these little bars are good!

They reminded me of the Coconut Cream Larabars, which are like crack and also my favorite.  These larabars are so easy to make.  How can you not try them when they take only 5 minutes?

The taste of lime comes out real nice in the finish.  It’s a subtle taste.  I only used the juice of 1 lime, bit you can add more if you like.  Now I have one question.  Is there any flavor I am forgetting about?  I thought maybe the blueberry flavor.

Ingredients

Instructions

  1. Process the cashews, coconut and almonds until they are a fine powder. 
  2. Then add the dates and lime juice until a dough forms.  If the dough looks a bit dry, you can add a few tablespoons of water to help it come together. 
  3. Line an 8×8 baking dish with parchment leaving enough room for some to come out the sides.
  4. Spread dough into the the dish.  It will be very stick and you may need to wet a spatula to help you. 
  5. Once the dough is evenly spread, press it down with your palms using the parchment paper. 
  6. Place in the fridge for a few hours to set.

Chocolate Mint Cookie Dough Bites

Chocolate Mint Cookie Dough Bites.  With St. Patrick’s day coming up, I am trying to think of some vegan friendly desserts.  This recipe came to me after I made my No Bake Vegan Nutella Bites.  These chocolate mint bites remind me of eating mint chocolate chip ice cream.

They are like Thin Mints without the guilt!  These little balls of goodness are vegan, dairy free, soy free and can easily be made gluten free by using gluten free oats.

The best part?  They can be made in 5 minutes.  Since there is no egg in this cookie dough recipe, it’s safe to eat right out of the food processor.

I had to stop my daughter before she ate most them!  They go really well with homemade almond milk.  Yum!

Chocolate Mint Cookie Dough Bites

Prep Time 10 min Serves 12 balls     adjust servings

Ingredients

Instructions

  1. In a food processor mix the cashew and oats until they are a powdery consistency.
  2. Then add the dates, cocoa powder, 2 T milk and peppermint extract and mix until a dough starts to form. If the dough looks dry, add a bit more milk.
  3. Roll into balls and place on a parchment lined baking sheet
  4. Set in the fridge to firm up. I got 12-14 bites out of my batch.

Healthier Vegan Nutella Bites.  Omg.  These might be the most delicious little bitesI have ever made.  I know I said this once before after I made the No Bake Cookie Dough Bites, but these even out shine those!

My mom is German, so I grew up eating Nutella.  When I was little, I would grab the jar and run to my room to eat it.  Now I know that it isn’t very good for you.

Being vegan meant giving it up as well.  I missed it terribly so I had to come up with a vegan friendly version.  There are no funky ingredients in these.  They take only minutes to throw together.

That’s right.  You could be only minutes away from popping one of these delicious balls of goodness into your mouth. 🙂  Can it get any better?

  1. If you are using raw hazelnuts, preheat oven to 375 and roast the nuts for about 7-10 minutes. If using roasted hazelnuts, skip this first step.
  2. In a food processor, grind the hazelnuts into a fine powder.
  3. Then add the dates, cocoa powder and milk and process until a dough forms.
  4. Roll the dough into balls and place in the fridge to set. Or, you can just eat them right out of the food processor.

Copycat Banana Bread Larabar Bites.  I just love making larabars!  So easy and they take minutes to make.

My favorite is still my coconut cream, but I think these banana bread larabar bites are my daughter Meadow’s favorite.  This is also a reader fave!  It’s easy to see why, they are delicious!

I think my husband’s favorite is the Chocolate Brownie.  This banana bread recipe took me two tries to get right.

I wanted to change it up, so this time I rolled them into bite sized balls instead of bars.  I got about 20-25 bites out of this batch.

Copycat Banana Bread Larabar Bites

Prep Time 10 min

Ingredients

  • 2 cups raw almonds
  • 1 ripe banana sliced
  • 10-12 pitted medjool dates

Instructions

  1. In the food processor, grind the almonds into a fine consistency.
  2. Next at the banana and the dates and pulse until a dough starts to form. You may have to stop every couple of pulses to scrape down the sides to insure that everything gets well combined.
  3. Roll dough into little balls and place on a baking sheet lined with parchment paper.
  4. Place in the fridge to set.

Keep them stored in the fridge and they should last a couple of weeks. Mine have never lasted more than a handful of days though!

Healthy No Bake Cookie Dough Bites.  Yes, you read that title right.  Healthy no bake cookie dough bites.  Such a thing does exist!  Who doesn’t love cookie dough?

These are sinfully good even with no refined sugar.  These no bake cookie dough bites may just be the most delicious things I have ever made.  It gets even better.

They only take minutes to make.  You could just be minutes away from popping one of these babies in your mouth.  I am drooling just looking at the picture.

  3. Lastly, add the water, a little at a time until a paste like dough forms.
