Special Birthday Cookies

On the 24th, my daughter Meadow turned 4.  She goes to pre-school and they celebrate birthdays.  So I made some special birthday chocolate chip cookies to take to her class. Let me say that there is some processed sugar in these.  Not much, but I bent my normal rules because it was her birthday treat.  I do allow my children to have treats once and a while, and a birthday is an occasion where a healthy chocolate chip cookie recipe that bends the rules a little is in order.

This healthy chocolate chip cookie recipe would be a great transition for those looking to eat healthier versions of sweets.  It’s sweeter than I normally would make, but if you are used to super sweet cookie recipes, this one is a great stepping stone.  Everyone loved them.  They are also gluten free and nut free!

Prep Time 10 min Cook Time 15 min Serves 19 cookies     adjust servings

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl.
  3. Mix wet in another.
  4. Add wet to dry and mix until everything is combined.
  5. Drop cookies on lined baking sheets and bake for about 13-15 minutes.
  6. I got 19 cookies out of my batch. Enjoy!

Pumpkin Pie Overnight Oats

Pumpkin Pie Overnight Oats.  My mind is buzzing with all kinds of new pumpkin recipes!  Naturally, I had to do one with overnight oats.

My favorite breakfast lately is overnight oats. So easy.  Even my daughter can make these.  You can make up 5 at a time for healthy breakfasts all week long.  No cooking even required!

It’s a great recipe to try with your little ones.  If you like a smooth oatmeal, use rolled oats.  If you like a crunch to your oatmeal, use steel cut oats.

  1. Pour all the ingredients into a jar and mix very well.  I make 5 at a time and they last all week!  Great for those busy mornings.  I think these would also be awesome with some chopped pecans too.  Enjoy!

Apple Cinnamon Overnight Oats

Apple Cinnamon Overnight Oats.  Fall is just around the corner.  That makes me think of warm smells like cinnamon and nutmeg.

I just love it!  This recipe is like having the fall flavors all wrapped up in one yummy breakfast!  If you have already made my Almond Butter Overnight Oats, you know that this recipe is super easy!

This oatmeal has a little crunch in the morning from the steel cut oats.  If you like more of a smoother oatmeal, then rolled oats may be better for you to use.

I make up a whole bunch of these and then just grab and go during the week.  I added no sugar to mine at all, but if you like your oatmeal a bit sweeter, I will put an option in the ingredients.

I put mine in small mason jars . They work great! I eat mine cold, but you can certainly heat your up if you like. Enjoy!

Lemony Cookie Dough Bites

Lemony Cookie Dough Bites that are vegan and gluten free.  I love lemons.  I put them in my daily juice.  I just love the way they smell and how they seem to freshen a recipe up.

I have plans for a lemon bar, but for now I just made these little bites.  I was inspired by the sweet and lemony taste that sugar cookies have.

Lemons are rich in vitamin C, so they can help protect you from colds and the flu.  Lemons can help cleanse and detoxify your liver.  They also contain 22 anti-cancer compounds and can help slow the growth of cancer.

A lot of people start their day with a large glass of water with lemon to help awaken the digestive system.  These little bites are really simple to make and only call for a few ingredients.

If you want to make the lemon taste even stronger, you can add a couple teaspoons of lemon juice as well.  My daughter and I filmed a short video about making these.  Despite an almost tantrum, I’d say things went well.

Ingredients

Instructions

  1. In the food processor , grind up the cashews and oats into a course meal.
  2. Add the dates, lemon zest, vanilla and water until a dough starts to form.
  3. Roll into balls and stick in the fridge for 30 minutes to set. I got 12 out of my batch. Enjoy!

Overnight Oats in a Jar

I am a fan of all things oats.  Loaded with protein and fiber, but relatively low in calories.  The high amount of fiber keeps you with a full feeling for a long time afterward.  Something that boxed cereal could never do.  I often have homemade granola for breakfast.  This is so easy, I wonder why I didn’t try it sooner!

I initially saw a recipe on Food Babe’s blog called, The Perfect Parfait.  Her recipe inspired me to try it.  So good!  I love how this recipe is very adaptable.  You can really add whatever you like and change it up daily so you never get bored. I used a recycled pickle jar to hold my oats, but a mason jar would work well too. This is great for those mornings that you really have to rush.

  1. Rinse your groats beforehand. Throw everything in the jar the night before.  If you like things a little sweet, you could throw in some chopped dates or raisins. 
  2. Store in the fridge overnight.  Just pull out and eat in the morning.  Easy as that. This will be a breakfast I will have at least twice a week. I love it and I hope you will too.

Almond Butter Protein Bars (Vegan)

Almond Butter Protein Bars.  Have I told you how much I love almond butter?  I eat it almost daily.  One of my favorite healthy sweet snacks is a date stuffed with almond butter.

If you haven’t tried it yet, you really should.  Totally curbs a sweet tooth!  So I created these almond butter protein bars with that snack in mind.

These would be a great pre/post workout snack.  Most of the protein shakes on the market are full of unwanted ingredients or too much processed sugar.

Why not try these instead?  They are filled with wholesome ingredients.  They can be made in minutes and you could enjoy one with my Energizing Green Juice.

Almond Butter Protein Bars

Almond Butter Protein Bars

Prep Time 20 min Serves 10 bars     adjust servings

Ingredients

Instructions

  1. In the food processor or Vitamix, grind the oats into a course consistency. 
  2. Add the remaining ingredients and mix until a sticky dough is formed. 
  3. From here, you can roll them into balls or make them into bars like I did.  I used an 8 x 8 pan, but I think a slightly smaller pan would work better.  If you use a pan, line it with parchment leaving enough room to come out the sides.  That way they will be easy to pull out and cut. 
  4. I used a pizza cutter to cut mine. 
  5. Let them chill in the fridge for about 30 minutes to an hour.  That’s it.  I cut mine into squares and got about 10 in my batch.  Enjoy!
