Spinach and Wild Rice Salad

Today, the youngest baby, and only boy in our extended family, had his baptism.  Most family gatherings of ours involve large amounts of BBQ.  After all, we do live in Texas!  So, being vegan, we offered to bring a dish.  We wanted to do something that everyone would enjoy and came up with this awesome salad.

Best. Salad. Ever.  We will be making this again.  It was a huge hit at the baptism as well.  Even all the meat eaters enjoyed it.  So, I had to share it with you all.  This dish is fairly easy to make and you can do most of the prep work the night before.
That is exactly what we did.

Spinach and Wild Rice Salad

Spinach and Wild Rice Salad

Prep Time 15 min

Ingredients

  • 3 cups spinach
  • 2 cups edamame de shelled
  • 2 cups wild rice cooked
  • 1 cup carrot julienned (about 2-3 carrots total)
  • 1 cup halved baby tomatoes
  • 1/2 cup mushroom finely chopped (about 13 button mushrooms)
  • 1/2 T garlic powder
  • 1/4 cup purple onion sliced very thin
  • 1/4 cup balsamic vinegar

Instructions

  1. Like I said above, you can cut the carrots, onion and mushroom ahead of time.
  2. Steam the edamame for a minute or two.
  3. Then throw all the ingredients in a large bowl and toss with the balsamic.

If you wish, you can add an optional 1-2 T of olive oil. We did not and it still tasted great. This make a very large amount so you should be able to get a few meals out of it. Enjoy!

Chickpea and Spinach Burgers

For those of you new here, my quest for a lot of different veggie burger recipes started after I wrote about Boca Burgers Exposed and also Morning Star Burgers Exposed.  These chickpea and spinach burgers are another delicious Pinterest find!  I found these on naturallyella.com.  Her blog has some pretty amazing looking food.  I suggest you go visit and take a look for yourselves. 🙂

My picture doesn’t look near as nice as hers, but I am still a newbie at the food photography thing.  I promise these are so yummy and really easy to make.  These would be great with a side of my Healthy French Fries.

Chickpea and Spinach Burgers

Prep Time 30 min Cook Time 40 min

Ingredients

  • 1/2 cup chickpeas (drained, if using canned)
  • 1/4 cup onion, diced
  • 1 cup spinach, packed
  • 1 T olive oil
  • 1/2 T soy sauce
  • 1 T oregano
  • 1 T smoked paprika
  • 2 T sunflower seeds
  • 1 egg
  • 1/4 cup whole wheat pastry flour
  • 1/2 cup whole wheat panko bread crumbs
  • pinch salt

Instructions

  1. Combine chickpeas and onion in a food processor, pulse a few times to break up the chickpeas.
  2. Add in spinach, oil, soy sauce, oregano, paprika, and sunflower seeds, pulse a few more times.
  3. Add in egg, salt, flour, and bread crumbs, pulsing until mixture comes together and is well blended.
  4. Remove from food processor, run your hands under water, and shape patties.
  5. If grilling out, bake in an oven for 10 minutes in order to get a start on the burger. If pan frying, you can use right away.
  6. If pan frying, cook over medium-low heat for roughly 6-8 minutes on each side. The outside should be browned and crispy.
  7. I baked my patties in the oven at 350 for about 15-20 on each side. They were crispy on the outside and softer in the middle. They reminded me of falafel. I spread my White Bean Pesto on top of these and it was delicious!

Spelt Blueberry Bread

I have been wanting to do blueberry bread/muffins for a while now.  This blueberry bread came out great and can even be done with frozen blueberries.  I used spelt flour in this and that is why I call it spelt blueberry bread.   If you haven’t baked with spelt, I recommend you try it.  It’s not gluten free, but it contains far less gluten than whole wheat.  It’s great in muffin and bread recipes like this one.

Growing up in Massachusetts, we had wild blueberries everywhere in the woods behind our house.  I would always pick them to bake with, or even just grab a handful and stuff them in my mouth.  Man, those were they days.  No worries about pesticides and GMOs then.  Now I just buy organic and hope for the best.  Maybe we will add them to our garden.  I am just not sure how they grow here in Texas.

  1. Preheat oven to 350. 
  2. Mix all the dry ingredients in one bowl. 
  3. Mix wet in another. 
  4. Add dry to wet. 
  5. Fold in blueberries. 
  6. Pour in a greased loaf pan and bake for 35-40 minutes or until a toothpick comes out clean.

Peanut Butter Cookies

I know I already have a recipe for peanut butter cookies on my blog, but I found this one on Pinterest and it looked interesting. I love Pinterest, don’t you?  I could waste so many hours looking at recipes. These peanut butter cookies are soft and delicious thanks to a secret ingredient.  The original recipe came from texanerin.com, and I saw it on thenutritiontwins.com website. These cookies look naughty, but they are not as unhealthy as you would think.  I thought this recipe was so good, I wanted to share it with you all.

These are grain free and they are really easy to make.  My husband had like 5 of them when they first came out of the oven.  I had to stop him so I had some to photograph!

Instructions

  1. Preheat oven to 350°F.
  2. Combine all the ingredients, except for the chocolate chips, in a food processor and pulse until very smooth.
  3. Fold in the chocolate chips.
  4. Roll the dough into balls. The mixture will be very thick and sticky.
  5. Drop cookies onto a lined baking sheet.
  6. Bake for about 12-15 minutes.

Black Bean Veggie Burgers

Ever since I wrote the post about Boca Burgers Exposed, I have been making it a mission to create easy veggie burger recipes.  Like these black bean veggie burgers.  You can read about the Boca Burger post here.  This is a burger recipe we have been making for a long time, so I thought it was about time to get it up on the blog. These burgers provides a nice alternative that even older kids should be able to sink their jaws into.  These black bean veggie burgers would be great on whole grain bread, in a sprouted corn tortilla or served over quinoa.  The key to making this a tasty dish is the caramelized onions and the crispy outside.

This recipe makes a lot so you will be able to freeze some.  That is what we do.  These would go great with my Healthy French Fries.

Prep Time 20 min Cook Time 1 hr

Ingredients

Instructions

  1. Preheat oven to 400. 
  2. Dice or food process the onion. 
  3. Saute the onions in the walnut oil on medium heat until they are caramelized. 
  4. In a food processor , mix the beans, flax egg and milk until the beans are mostly smooth. 
  5. Put the bean mixture, the onions and the remaining ingredients in a bowl to combine.
  6. To finish, lightly oil a baking pan, grab a quarter cup of the mixture at a time, flatten in a nice round patty, and place on pan. 
  7. Continue until the mixture is gone. 
  8. Bake in oven for about 45 – 60 minutes turning over once about half way through.

Black Bean and Corn Salad (Vegan)

This black bean and corn salad is really easy and costs almost nothing to make.  At our house, we eat lots of cold salad and this is black bean and corn salad is one we have made on occasion.

Since the new year is approaching, I wanted to make sure to put more cold salads on the blog for those that are looking to lose some weight.

This is really versatile.  We made ours vegan with no cheese or meat, but you can most certainly add them if you wish.  We have talked about adding wild rice or quinoa to ours to make it last longer.  You could also wrap it in a tortilla or lettuce wrap.  The possibilities are endless really!
