Strawberry Mousse (Vegan and Gluten Free)

Hooray for Strawberry Mousse!  Especially when it’s made healthier.  I am so glad that spring is here.  That means the price of berries becomes more affordable.  So I have been making all kinds of treats with strawberries.

My most recent strawberry recipe, my strawberry truffles, quickly became one of my most pinned recipes.  I am hoping you will enjoy this healthy mousse recipe as well.

Easy Strawberry Vinaigrette (Oil Free)

Easy Strawberry Vinaigrette.  I have a new dressing recipe for you! It’s strawberry vinaigrette. This time it’s an easy dressing that is perfect for spring.

I already have a balsamic vinaigrette on the blog. This oil free strawberry vinaigrette recipe is a twist on that.

Coconut Strawberry Overnight Oats

Coconut Strawberry Overnight Oats.  As you know, I just love my oats.  And my favorite way to eat them is in the form of overnight oats.

Overnight oats, or Oats in a Jar, are so easy and you don’t even need to cook them!  This coconut strawberry overnight oats is my newest creation.

You can make these with either rolled oats or steel cut oats.  I like steel cut oats myself.  They will retain a slight crunch that I like.

If you like a smoother oatmeal, feel free to use rolled oats instead.  These overnight oats are gluten free and vegan. 🙂  If you are not gluten free, feel free to use regular oats.  That is what I do. 🙂

Strawberry Creme Truffles (Vegan and Paleo)

These Strawberry Creme Truffles need to go on your must make list!  Who is excited that Spring is finally here?  I just love all berries and I am happy that I am starting to see them in the grocery store now.  I picked up a carton of organic strawberries the other day and I came up with these delicious strawberry creme truffles.

They are amazing and the filling just melts in your mouth!  You may also like my Pistachio Truffles or my Copycat Reese’s Peanut Butter Eggs.  These dreamy, creamy truffles would also make a great Easter treat!

Grain Free Strawberry Tart (Vegan and Gluten Free)

Grain Free Strawberry Tart.  I am a big fan of fruit tarts and strawberry tarts are my favorite.  In fact, strawberry fruit tarts might be my most favorite dessert, especially in the summer.

So I had to make this grain free and vegan strawberry tart!  I already made a Grain Free Blueberry Tart that is on the blog.  It came out amazing, but I think I perfected the custard base this time around with the strawberry tart.

It really tasted like the fruit tarts from Whole Foods except my tart recipe is dairy free!  This week, Whole Foods was selling organic strawberries 3 for $10, so I picked up some.

I initially was going to create a strawberry shortcake, but the shortcakes didn’t turn out right, so I turned it into a tart instead.  What a blessing because this may be the most delicious thing I ever made!

I had to resort to serious willpower not to inhale half of it.  Another great thing about this is it’s raw, vegan, gluten free, grain free and dairy free.  So almost anyone can enjoy it.

Grain Free Strawberry Tart

Grain Free Strawberry Tart

Prep Time 30 min Cook Time 60 min Serves 8-12 slices     adjust servings

Ingredients

    For the crust

    For the strawberry topping

    For the custard

    Instructions

      For the strawberry topping

      1. In a large bowl , add the strawberries, sugar and lemon zest. Place in the fridge for about 3 hours.

      For the tart

      1. In the food processor , combine the almonds, salt and flax seed into a course powder.
      2. Add in the dates and the water and pulse until a dough starts to form.
      3. Once the dough is formed, gently form it into a greased tart pan . Wet hands work best for this.
      4. Once the crust is laid out in the tart pan , place in the fridge for 20 minutes to firm up.

      For the custard

      1. While the crust is firming up, make your cashew cream.
      2. Drain the cashews that have been soaking overnight and add them to a blender with the coconut butter, maple syrup and milk.
      3. Blend until a thick custard-like cream forms.
      4. Remove it from the blender and spread it out over the crust.
      5. With a slotted spoon , spoon the strawberry mixture on top of the custard leaving only the liquid left over in the bowl .

      Save the left over liquid and use as a syrup for pancakes or waffles ! This should keep in the fridge for about a week. Ours didn’t even last that long!

      Strawberry Ice Cream

      Hooray!  Warm weather is here.  At least, in Texas it is.  So it’s time to start breaking out the ice cream maker.  I already have a Cookie Dough Ice Cream and a 5 Minute Banana Ice Cream on the blog.  Now it’s time to add another: Strawberry Ice Cream. Who doesn’t like strawberry ice cream? I know I love all things ice cream, especially strawberry ice cream.

      I use canned coconut milk as a base for all my ice cream recipes for a few reasons.  It has that rich taste and mouth feel of real ice cream and it is dairy free.  I have tried using just nut milk, but it never comes out as creamy.  Since this is so rich tasting, a little bit will satisfy you.  You can use either fresh or frozen strawberries for this.  We used fresh organic strawberries since they were on sale the other day at Whole Foods.  They were so sweet and yummy!  Most store bought ice creams contain carrageenan and other unwanted additives.  The organic stuff is always so expensive.  The ice cream maker is pretty affordable and you make your money back pretty quick.  Plus, you can create your own flavors! 🙂

      Prep Time 10 min Serves 4 - 6 servings     adjust servings

      Ingredients

      Instructions

      1. Mix the coconut milk, vanilla bean and the sweetener in a bowl.
      2. Pour the contents in the ice cream maker. I used my Cuisinart.
      3. When the ice cream starts looking like it is coming together (after about 15 minutes), add the strawberries.
      4. The ice cream will be more of a soft serve consistency. If you like harder ice cream, you can stick it in the freezer for another 1 1/2 hours. That’s it. Enjoy!
