Gingerbread Baked Oatmeal. Now that Thanksgiving is officially over, I feel it’s time to spread the gingerbread love with some more vegan gingerbread recipes!

Currently, I have a Gingerbread Overnight Oats recipe as well as a No Bake Gingerbread Cookie recipe, so this gingerbread recipe fits in nice.

 

Gingerbread Baked Oatmeal - My Whole Food Life

 

Baked oatmeal is so great.  It’s the oatmeal you can take on the go.  This is a very easy gingerbread recipe that takes very little time to make.

These are freezable as well, so feel free to double the batch and freeze some.  That way they can be for those mornings when you need a quick breakfast on the go.

Ingredients

Instructions

  1. Preheat the oven to 350. 
  2. Mix all the dry ingredients in one bowl .  Mix wet in another.  Add wet to dry and mix well. 
  3. Spoon batter into lined muffin pans and press down well with the back of a spoon.
  4. Bake in the oven for 15-17 minutes. 
  5. Wait until they are completely cooled before removing them from the pans.

I used jumbo muffin pans and got only 4. You can probably get double the amount using standard sized muffin pans .

These should last a week in the fridge and longer in the freezer. And don’t forget, you can use gluten-free oats to make them gluten-free. Enjoy!

Black Rice, Squash and Pomegranate Salad

I love salads all year round.  In fact, the majority of the meals I eat are salads.  I know, boring right?  In the winter months, I just try to create heartier versions.  This meal was inspired by my Wheat Berry Salad with Cranberries.  I wanted to create a gluten free version of that.  So here you go.

 

Black Rice, Squash and Pomegranates - My Whole Food Life

 

This is a meal that will keep you full for quite some time.  It also makes about 4-5 servings.  I love the earthy and nutty flavor of black rice.  You can also use wild or brown rice.

 

Black Rice, Squash and Pomegranate Salad

Black Rice, Squash and Pomegranate Salad

Prep Time 15 min Cook Time 45 min

Ingredients

  • 3 cups cooked black rice
  • 2 cups butternut squash cubed
  • 1/2 cup pomegranate seeds
  • 2 T fresh parsley chopped
  • 1 tsp fresh thyme
  • 2 T apple cider vinegar
  • 1 T olive oil (optional)
  • Juice of 1/2 an orange or 1/4 cup orange juice
  • salt to taste

Instructions

  1. Preheat oven to 400.
  2. Peel and chop the butternut squash into cubes.
  3. Place it onto a greased baking sheet with a little salt.
  4. Roast in the oven for 45 minutes.
  5. Once the rice and squash are cooked and cooled, add them to a bowl with the remaining ingredients.

No Bake Gingerbread Cookies (Vegan)

No Bake Gingerbread Cookies that are vegan, gluten free and paleo.   As Thanksgiving comes closer, it’s time to think about gingerbread everything.

I am sure everyone is starting to get sick of all things pumpkin these days.  I have been wanting to make these no bake vegan gingerbread cookies for a while now and I’m so glad I did.  They are AMAZING!

These delicious no bake vegan gingerbread cookies are seriously easy to make.  This is a cookie batter that’s safe to eat. These no bake paleo gingerbread cookies are also gluten free, grain free and vegan.  Can it get any better?

Chocolate Peppermint Truffles (Vegan)

Chocolate Peppermint Truffles.  This time of year makes me think of chocolate.  So how about some chocolate peppermint truffles?  Truffles, cookies, brownies to name a few.  It seems like there are always sweet treats going around at parties.

I have been trying to come up with cleaner versions.  This chocolate peppermint truffle recipe is another one of those.  Only 4 ingredients and just a few minutes!

I got the idea for these peppermint truffles after making my Chocolate Pistachio Truffles.  These healthy truffles are so good and they just melt in your mouth.

The best part?  They can literally be made in minutes!  I used to think truffles were hard to make, but this recipe proved me wrong.  It couldn’t be easier.

  1. In a food processor , combine all the ingredients and blend until a dough starts to form.
  2. Roll into balls and place on a lined baking sheet.

Slow Cooker Maple Glazed Pecans (Vegan)

Slow Cooker Maple Glazed Pecans.  The other day I happened to find an interesting recipe on Pinterest.  It was Vegan in the Freezer’s Slow Cooker Maple Glazed Walnuts.

I loved the idea of cooking the nuts in the crock pot.  Something I had never thought to try.  I am not a fan of walnuts, so I made slow cooked nuts with pecans.

My recipe is loosely adapted from hers.  These came out amazing!  I didn’t even cook them that long, but the maple syrup almost caramelizes.

So good! I love the salty sweet combo. It reminded me of the flavors in kettle corn.  The crock pot will seem like it’s going to be hard to clean.

Here is a trick.  Once the nuts are done, fill the crock pot with soapy water and turn it back on for a few minutes.  Then it will be super easy to clean.
