Blueberry Bliss Bars (Vegan, Gluten Free, Paleo)

I don’t know if you noticed, but I love recipes that use only a few ingredients.  These Blueberry Bliss Bars are just that.  All you need is 4 simple ingredients to make these blueberry bliss bars!

This no bake recipe is perfect for summer.  I know I don’t want to spend time in my kitchen with the oven on.  It’s hot down here in Dallas!

These yummy bliss bars are vegan, gluten free and paleo.  This was my first time using creamed coconut and I have to say that it was pretty much exactly like coconut butter.  The only difference I noticed, was that creamed coconut seemed to soften faster out of the fridge.

Another great thing you could do with these no bake bars is drizzle a little of my 3 ingredient chocolate over the top.  Yum!  If you do that, then you will need to keep the bars in the freezer.

Prep Time 5 min Serves 18 small squares     adjust servings

A no bake treat perfect for summer!

Ingredients

Instructions

  1. Combine all ingredients in a food processor until the mixture is smooth.
  2. Line an 8x8 pan with parchment paper, leaving enough room for some paper to stick out the sides.
  3. Dump the mixture into the pan and spread it out evenly. The mixture is very thick and you may need to wet a spatula to help spread it evenly.
  4. Once the mixture is in the pan. Gently press down using the extra sides of parchment paper.
  5. Stick the pan in the fridge to firm up. This should only take about 15-20 minutes.
  6. Once the mixture is firm, lift the whole thing out by the edges of parchment paper.
  7. I used a pizza cutter to cut mine into squares.

UPDATE: Some brands of creamed coconut will cause these to stay soft in the fridge. If you find that happens to you, just pop the bars in the freezer instead. You can also use coconut butter in place of creamed coconut

Please store these bars in the fridge. I keep mine in an airtight container with a piece of parchment between each bar. They should last at least a week in the fridge and you can also freeze them for longer storage. Enjoy!

  3. This look wonderful and I have about 6 lbs of blueberries I need to use. My problem is that all 3 of my kids react to coconut. Is there something else that would hold up like coconut cream? I was considering Greek yogurt but do now know if it would solidify the same way.
    1. You can try cream cheese, but you may have to add some extra maple syrup to balance out the tangy flavor of the cream cheese
    2. Maybe try bananas? Then put the bars in the freezer? I make banana ice cream with blueberries all the time and it's great. Put a date or three in to thicken it up.

  5. Tried these today and though the flavor is very yummy, they turned out very soft. My batter was not as thick as you describe in the recipe. It was the consistency of a soft mousse. I used one can of trader joes coconut cream and liquid vanilla instead of ground. Should I have put the coconut cream in the fridge overnight?
    1. I didn't refrigerate my coconut cream. I used artisana brand. Maybe it's thicker? I think if you stuck them in the freezer they might be okay.
    2. Coconut cream and creamed coconut are not the same thing at all. Coconut cream is just the creamy fat from the top of coconut milk, creamed coconut is just that: coconut flesh, blended.
  6. Just FYI the coconut cream link goes to creamed coconut, not coconut cream. Is that correct? My local health food store carries that brand and it is a rock hard type of creamed coconut, aka coconut butter, not coconut cream.
    1. The brand I bought said creamed coconut. I used Artisana. They also sell coconut butter, so I am assuming that the two were different.
      1. Yes, the two are very different. So maybe the recipe should specify that it is creamed coconut. Trader joes coconut cream is the cream risen on coconut milk, like what you get when you do your trick to refrigerate coconut milk and just use the solids. If you used creamed coconut and others are using coconut cream, there will be ver different results.
        1. Creamed coconut = coconut meat solids processed to a pulp or butter consistency Coconut cream = the fatty parts of coconut milk, no coconut meat solids.
        2. I have edited the post with an update at the bottom. I think you can probably still use coconut cream, you will just have to freeze them instead of refrigerate.
  7. I made these according to the recipe using canned coconut cream from Trader Joes. I substituted 2 tsps. of vanilla extract for the ground beans. I didn't worry about the extra liquid since the coconut cream wasn't quite 2cups. They didn't set, even after freezing. Any idea what could have gone wrong-so disappointed. They looked sooo good.
    1. A few people have been having this problem with Trader Joe's coconut cream. :( I am so sorry. How long did you keep it in the freezer?

  8. Getting ready to pull out of the fridge. The batter tasted yummy! I would say, mine look a little more blue/grey from the blueberries, but tasted great! I used coconut cream concentrate from Tropical Traditions and they came out as the recipe stated. Thank you!
  9. I used the TJ coconut cream as well. Mine were not the least bit thick...it was like pouring milk into the pan. But I did freeze it and it is like ice cream. It's good but will have to try it with your creamed coconut.
    1. I'm glad you liked it! I am starting to think the brand I bought mistakenly marked the jar as coconut cream. It was almost more like coconut butter.
      1. The link you have for the one on Amazon says its "Creamed coconut" and not coconut cream. I read the side of the box from Amazon and it says to mix with hot water to replace coconut milk in recipes and to use in soups. So I am assuming this is really thick. From your picture it looks like ice cream. Mine looked like milk. My next order from Amazon I will order what you have linked and try them again.

          1. you said you use coconut cream brand Artisana. Your link is for Creamed coconut brand Let's Do Organic. Your Artisana brand looks like "butter or like jelly" consistency. The Let's Do Organic is a hard brick. After reading all the comments I am still very confused. Which one do I use?

  10. My daughter is extremely allergic to coconut, but these look sooo delicious. Is there anything else that can be used? We love blueberries. I hope there is something we could use. This looks like a staple in our house. Thanks, Peggye
    1. I am not sure of a sun for the coconut. :( Maybe cream cheese? You may have to store them in the freezer if you use cream cheese though.
  11. How creative! I keep seeing coconut cream but have been hesitant to buy it not knowing the consistence or texture. Great to know it will set up like coconut butter (for the most part!). Thanks for sharing this looks delish!
    1. Thank you! Different kinds of coconut cream set up differently. I am finding that out when people are making this recipe. I highly recommend using the creamed coconut I used to make these. It was Artisina creamed coconut.
      1. that's because coconut cream and creamed coconut are NOT the same thing. that is why people are having this recipe not turn out, or turn out tasty but entirely different texture. coconut cream does not include the flesh of it, so no, it won't set up the same way, it doesn't include the solids of the coconut.
          1. But your bolded note still refers to brands of "Coconut cream", which is NOT the product that will make the recipe work. It should say "Make sure you have creamed coconut or coconut butter, coconut cream will make a lovely mousse or even ice cream, but not bars."
