Peanut Butter Pie (Vegan and Gluten Free)

Peanut Butter Pie.  I am a huge fan of all nut butters.  My whole cookbook is dedicated to them.  Personally almond butter is my favorite, but my husband’s favorite is peanut butter.

He just loves the stuff.  So I created this super easy peanut butter pie for him as well as you peanut butter lovers out there!

This peanut butter vegan pie has 3 layers. A nut and coconut crust, creamy peanut butter mousse filling, and chocolate ganache on top.

It’s super rich and decadent.  It wouldn’t take much to satisfy your sweet tooth.  Just a small slice will do.

Since this recipe is rather rich and  decadent, I would reserve it for those days when you want to splurge a little.  Not an everyday treat. 🙂

If you didn’t want to use chocolate chips for the top layer, you can use the 3 ingredient chocolate recipe in this video.  For more videos, you can subscribe to my You Tube Channel.

Smoky Sweet Potatoes and Avocado with Cauliflower Rice

I have been wanting to try out cauliflower rice for a long time.  For some reason, I thought it would be hard to make.  Boy was I wrong!  Making cauliflower rice is super easy. I first learned how to make it from Tasty Yummies.  She has a step by step tutorial.  This smoky sweet potatoes and avocado with rice is delicious and very filling for a grain free dish!  I have been venturing into grain free meals lately.  I already have a zucchini pasta with avocado pesto and a spaghetti squash with pesto on the blog.  I will be making this recipe again in the near future!

Sweet Potato, Avocado and Cauliflower Rice - My Whole Food Life

I cooked the rice and the sweet potatoes the day before.  So the following day I only had to quickly throw them together.  Cauliflower rice has the same mouth feel as rice.  I was really surprised how good it was!  You have to try it.

Heathy Avocado Pesto Dip (Vegan)

I am a huge fan of avocados.  So I made some avocado pesto dip.  In my opinion, avocados make everything better.

Avocados are great on their own, in salads or smoothies.  This avocado pesto is fantastic.  It is oil free and dairy free.

I loved this healthy vegan pesto dip as a dip, but I could also see it being used as a sauce or maybe in a wrap as well. 🙂

If you are worried about the avocado browning, you can always squeeze a small amount of lemon juice onto it.  I ate it for a second time today and it tasted great even though it had browned a little.
