Pecan Coconut Truffles

So yesterday I had this great idea.  I was going to make a sweet spread out of pepitas and pecans.  You know, with a little spice for the season?  Well my idea was a fail because my spread never got to the right consistency.  So instead of scrapping the whole thing, I turned them into delicious truffles!  If you like my Coconut Truffles, you will love these!

I added the coconut to hide the not so appealing color of the truffles.  You could also coat them in chocolate if you like.  These are a cinch to make and taste so good!  They would be great for holiday parties along with my Pistachio Truffles.

Pecan Caramel Ice Cream

I love making ice cream. It’s one of those things that looks hard until you try it.  This pecan and caramel ice cream might be one of the best ice creams I have ever made. This stuff is good… I really can’t say enough about this pecan caramel ice cream recipe.

You are probably wondering how I made a vegan caramel.  Dates can make an incredible caramel if you just blend them with a little water.  I love that I can make a caramel with zero added sugar.  I also added very little sugar to the ice cream mixture itself.  This recipe is like my 3 ingredient Peanut Butter Ice Cream.  Just a few simple ingredients is all you need.

      Pecan Pie Filled Muffins

My daughter loves muffins with surprises inside, so this recipe is for her.  Who doesn’t like a surprise?  I already have my Nutella Filled Banana Muffins on the blog. These muffins contain a sweet little surprise, but they are made with wholesome ingredients.  If you like my Pecan Pie Larabars, you will love these!  This is a great one to make with your kids.

I let my daughter put the filling into each muffin.  It was fun to be able to let her help me bake.

I got 12 standard sized muffins and 1 jumbo muffin out of my batch. These should last 2 weeks in the fridge, but you can freeze them for longer storage.

        Maple Pecan Cookies

I have had it on my mind to make these maple pecan cookies for a while now and I finally got around to it.  These maple pecan cookies came out really tasty!  Maple and pecans are two of my favorite things, so why not throw them together and make a maple and pecan thumbprint cookie.

These are made with whole grains and no refined sugar.  I also added extra crushed vanilla bean and cinnamon to make the cookie appear sweeter than it actually is.  Did you know that spices can do that?  I was pretty surprised to first read that, but now I swear by those vanilla beans.  They are amazing!  This is a great recipe to do with your kids as well.  Since my daughter is only 3 1/2, her job is to push the pecans into the middle of the cookie.  I used raw pecans for my recipe, but they would be equally delicious with my Candied Pecans as well.

        Candied Pecans

These are so yummy and versatile!

        nuts 1

Here in Texas, many people have pecan trees.  We are not one of the lucky ones, but we do have several neighbors who do.  When I go for walks with my daughters, sometimes we collect a few that the squirrels have not gotten to yet.  My 3 year old thinks it’s the coolest thing ever.  These candied pecans can be used in so many ways.  You can toss them into plain yogurt, add them to cereal, throw them on a salad or just eat them straight up to curb a sweet tooth.

        Candied Pecans

        Candied Pecans

Prep Time 10 min Cook Time 15 min

        Ingredients

        • 1 1/2 cups pecans (raw and unsalted)
        • 2 T pure maple syrup
        • 1 tsp crushed vanilla bean (you can use extract, but I think the crushed vanilla bean adds an extra sweetness that I can never get with the extract.)

        Instructions

        1. Preheat oven to 375.
        2. In a bowl toss the pecans in maple syrup. If using extract, add that too.
        3. Once the nuts look well coated, spread them out onto a parchment lined baking sheet.
        4. Sprinkle the vanilla bean over the pecans and place in the oven.
        5. Bake for around 15 minutes, stopping halfway through to shake them pecans around a bit. Enjoy!
