Pumpkin Truffles (Vegan and Gluten Free)

Pumpkin Truffles.  Are you sick of pumpkin yet?  I am so obsessed with pumpkin recipes these days.  These pumpkin chocolate truffles are delicious and they would be perfect for a Thanksgiving dessert.

I had to stop myself from eating more than one.  These pumpkin chocolate truffles may be my most favorite pumpkin dessert recipe yet!  You can’t really go wrong with pumpkin and chocolate!

These pumpkin truffles are a little bite of heaven.  You only need 7 ingredients to make them!  They are vegan, gluten free and paleo.  Imagine a pumpkin cream covered in chocolate.

Perfection!  I used chocolate chips in my recipe, but this would also work with my 3 ingredient chocolate recipe.  If you choose to use that, don’t add the milk.  Just make the chocolate sauce as is.  I hope you enjoy this as much as I did!

Prep Time 5 min Serves 20 truffles     adjust servings

Pumpkin and chocolate go so well in this easy truffle recipe!

Ingredients

    For the pumpkin

    For the chocolate coating

    Instructions

    1. In the food processor , combine all the ingredients for the pumpkin cream. Blend until smooth.
    2. Stick the food processor bowl in the fridge to firm up a little. About 10 minutes.
    3. Using a cookie scoop , drop mixture onto a lined baking sheet .
    4. Place the baking sheet in the freezer to firm while you make the chocolate mixture.
    5. To make the chocolate use a double boiler method. Fill a saucepan with water and bring it to a boil.
    6. Place a glass bowl on top of the pot with the water. Add the chocolate chips and almond milk to the glass bowl and gently melt the chocolate.
    7. Once all the chocolate is melted, use a spoon to drizzle the chocolate over each truffle.
    8. Place in the fridge to firm up the chocolate.

    Please keep these truffles in the fridge. They should last a couple weeks. You can freeze them for longer storage. Enjoy!

        1. Thanks for the yummy recipe. The coconut butter looks like a yogurt consistency and you mentioned milk as a substitute. Would you recommend yogurt instead of milk or does it really matter?
          1. Yogurt may be a little too soft. Coconut butter is more of a peanut buttery consistency. It just looks a little watery in the photo because I didn't stir the jar very well.
            1. Is coconut butter the same as coconut peanut spread (found in peanut butter aisle) or like butter found with Earth's Balance products in dairy department?

    6. Does the coconut butter affect the taste of the truffles? We have a severe coconut allergy in our house, but a love of all things pumpkin.
      1. You can try making these with cream cheese instead of coconut butter, but you will need to add more sweetener to mask the tartness of the cream cheese. Not 100% sure it will work though.
