This is very budget friendly and makes a lot.  Make it up on a Sunday and have breakfast for the entire workweek. My husband takes it to work every morning.

Flourless Pumpkin Muffins. The other day I made some Flourless Apple Muffins.  They came out really well.  As soon as I made them, I knew I wanted to make a pumpkin version.  So I am bringing you these flourless healthy muffins.

They came out totally delicious.  No flour and no refined sugar.  I added some cranberries for a little burst of flavor.  You can also add chocolate chips or raisins if you prefer. I also think pecans would be a nice addition.  I didn’t add them because my baby girl is allergic.

Blueberry Flax Granola.  I used to be a huge cereal fan.  When I went to a whole foods way of life, I ditched the cereal for homemade granola.

I have many homemade granola recipes on my blog, now I can add this blueberry flax vegan granola recipe to the list.  If you have never made granola, this is a great recipe to start with.

It only has 7 simple ingredients.  If you don’t care for blueberries, you can use any dried fruit you like in it’s place.

Chocolate Pumpkin Loaves (Vegan and Gluten Free)

Chocolate Pumpkin Loaves.  I have many pumpkin recipes, but I haven’t made a chocolate pumpkin recipe until now.  My husband is a huge chocolate fan, so these chocolate pumpkin vegan loaves were right up his alley.

I am not that into chocolate (gasp!), so I prefer the eat my regular pumpkin muffins.  These got his stamp of approval though!

If you want to boost the chocolate flavor even more, you can add in some dark chocolate chips.

These Chocolate Pumpkin Loaves are vegan and gluten free.  Super simple to make too.  If you don’t have a mini loaf pan, you can also make these as muffins.  Just adjust the cooking time to about 10 minutes.

Pumpkin Chai Donuts

I am just loving the flavor of these pumpkin chai donuts!  I have been into all things chai flavored lately.  First there was my flourless chai sandwich cookies and then my coconut vanilla chai ice cream. Now these delectable donuts.  These are vegan and gluten free.   The chai flavor was perfect with the pumpkin. I hope you enjoy it as well. If you are not into chai flavors, but love pumpkin, you can always make these muffins instead.

If you donut have a donut pan, you can always make these into muffins.  You may have to adjust the cooking time though.  These would also be delicious with this frosting recipe spread on top.

Spinach Chickpea Omelets (Vegan)

On occasion I like to eat a savory breakfast. Sometimes you need a change from overnight oats.  That is why I make these Spinach Chickpea Omelets.  Before I became vegan, I LOVED eggs.  They are actually one of the only animal foods I miss.

These chickpea omelets fill that void though.  I eat one of these with a side of roasted veggies.  So good and it’s a great way to get more veggies into your diet.

While this recipe is written with spinach, you can use the recipe as a base to add in whatever veggies you like.   I originally saw the recipe for chickpea omelets on this website.  I have changed up the original recipe quite a bit.

You can make these 2 ways.  Make the batter thicker for more of a pancake feel, or make the batter thinner, to make them more of like an omelet.

I personally like the pancake option better, but that is just me.  I serve this with a side of roasted vegetables.  My favorite vegetables to eat with this are sweet potatoes and Brussels sprouts. Yum!
