Summer Salad with Chickpeas. I am a huge fan of salads. I like all kinds of salads. Salad recipes are great in the warmer weather since you don’t have to worry about heating up your kitchen.
Salad recipes are also usually very budget friendly, not to mention super healthy! I hope you enjoy this healthy summer salad with chickpeas, basil and tomatoes as much as I did!
I just loved roasted chickpeas. They make such a healthy snack and can be done sweet or savory as you have seen in my maple cinnamon roasted chickpeas and my smokey roasted chickpeas. When my husband made homemade sriracha a few weeks ago, I instantly knew I wanted to try sriracha roasted chickpeas.
For those of you that don’t know, my husband is Turkish. We eat a lot of Turkish inspired meals at our house. Falafel is just one of those. So I made a baked falafel burger. Since traditional falafels are fried, I wanted to make them healthier by doing a baked falafel burger. These baked falafel burgers came out great!
Sometimes in the late afternoons, I get an urge to snack. Roasted chickpeas are a great, healthy snack alternative. They can be done sweet or savory. I made a sweet version with my Maple Cinnamon Chickpeas. This is a savory option.
I am warning you, these are highly addictive! They are very easy to make. If you don’t eat them all at once, you can store them in a container with rice scattered at the bottom. The rice will help absorb the moisture and keep them crispy. In addition to the spices I list, you can also add a pinch of cayenne if you like some extra heat.

Spring is here and in Texas the weather is starting to get warm. I have been trying to come up with a bunch of healthy options for outdoor parties. I already have my Dairy Free Potato Salad and my Pineapple Mango Salsa. Now I have a macaroni salad to add to the list.
Most traditional macaroni salad is swimming in mayo. Not this. This is another meal that is really easy to put together. I used brown rice pasta for this recipe so it is gluten free as well. Since I added the chickpeas, it can be a complete meal and not just a side dish. The golden balsamic and the pomegranate molasses give it a slightly sweet taste. Both really make the dish. You can find the pomegranate molasses at most health food stores.
Cook the macaroni according to the box instructions.
Let cool.
Add all the ingredients in one bowl and mix to serve.

This just gets better as it marinates in the fridge. I like it better the next day. It should keep for about a week. We got about 4 servings out of this. Enjoy!

My recipe contains no added sugar and it is still just as good. The chickpeas and tomatoes are my twist on this popular salad. I wish I had doubled the batch because it was gone in the same day!
