Tropical Popsicles

I love making my own popsicles.  These tropical popsicles are my latest creation  Most store bought brands contain unnecessary ingredients.  When I make my own, I can create whatever I like.  I even take requests from the girls.  It’s been so hot here in Texas, so a frozen treat is perfect. These tropical popsicles are awesome. They are cool and refreshing, and well… tropical.

Raspberry Nutella Tarts

I have said this before, but growing up with a German mother meant we ate a lot of Nutella.  I loved it as a child.  Now I know that store bought Nutella is very unhealthy.  So I have created my own Healthy Homemade Nutella.  I have used it in many dishes on this blog.  Now it is time for a Raspberry Nutella Tart.

We all need to enjoy a tart every once and a while.  I love them and they are perfect for summer.  There is no cooking involved!  These are completely raw.  They are also vegan, grain free and gluten free!  If you feel compelled to cook the crust, you can.  You just don’t need to.  These are very easy to make even though they look kind of fancy.

Prep Time 30 min Serves 5 tarts     adjust servings

Ingredients

    For the crust

    For the filling

    For the fruit

    • 2 cups fresh raspberries or strawberries

    Instructions

      For the crust

      1. In a food processor , grind up the almonds until they are a course consistency.
      2. Once they are ground, add in the dates and water until the dough comes together. If you are not using a high powered food processor , you might want to soak the dates for 5 minutes in water to soften them.
      3. Grease your tart pan or mini tart pan s and then press the dough into the pan and up the sides. The dough will be sticky and I find that working with wet hands helps.
      4. Once the dough is set into all the tarts, place them in the fridge to firm up. About 30 minutes.

      For the filling

      1. While the tarts are setting up, you can make the filling. In the food processor , grind up the hazelnuts into as fine of a powder you can get them.
      2. Once they are ground, add in the remaining ingredients. If the mixture seems too thick, you can always add a bit more milk.
      3. Once the crusts are set, spoon the filling into each one and top with the fruit.
      4. Enjoy!

      Grain Free Blondies (Vegan Too)

Grain Free Blondies you guys!!  I don’t know if you have noticed, but I am trying to branch out and create more recipes that are grain and gluten free.

I have already done so with my Grain Free Blueberry Tart and my Healthy Key Lime Tart.

Since the gluten free and grain free diets seem to be a trend nowadays, I thought you may enjoy this recipe.  These grain free blondies may be the start of many more grain free desserts in the future.

      Grain Free Blondies

I under cooked mine slightly because I wanted to maintain a gooey and soft center.  Another awesome thing about these blondies is that they are only sweetened with dates.  I love dates!

Soft and gooey blondies that are grain free!

      Ingredients

      Instructions

      1. Preheat oven to 350.
      2. Mix all the dry ingredients in one bowl .
      3. In a food processor , grind up the dates.
      4. Add the almond butter and coconut oil and pulse together.
      5. Transfer the mixture to a mixing bowl and add in the eggs, vanilla and milk.
      6. Lastly, add the dry ingredients and mix well.
      7. Cut a sheet of parchment paper and place it into an 8X8 baking dish .
      8. Make sure you have enough paper to stick out the sides so you can easily grab the whole thing out of the pan.
      9. Spread dough evenly inside the dish. The dough will be sticky and using wet hands or a wet spatula can make it easier.
      10. Bake in the oven for about 20 minutes.
      11. Let it cool completely before removing, and then cut the blondies into squares with a pizza cutter .

      Homemade Coconut Butter (Vegan)

Homemade Coconut Butter is amazing! If you have been following this blog for a while, you know that I LOVE coconut and coconut butter.

Funny thing is, I used to hate it.  Now my body craves it.  I guess it knows what is healthy. 🙂  I had an obsession with coconut butter ever since my first taste of Nutiva Organic Coconut Manna.

That stuff is the bomb and it melts in your mouth.  It can get quite pricey, so I thought I would make my own coconut butter.  It’s super easy!

So easy that I feel kind of funny calling it a recipe.  Kind of like my Homemade Peanut Butter.  Coconut butter just takes a bit longer than peanut butter, so be patient.

Coconut butter can be used a spread or a dip.  If you use it in baking it can add a richer flavor.  Coconut butter is naturally gluten free, grain free and vegan.

      1. In the food processor , blend up the shredded coconut, scraping the sides down every few minutes. Be prepared to be patient. It takes about 20 minutes.

      Recipe Notes

If you use a blender , it takes about half the time, but you have to scrape down the sides more often and it is harder to manage. I liked making it in the food processor much better. I mixed it for a minute or two and walked away. Came back to mix some more a few minutes later. I just kept repeating those steps until I saw a creamy mixture. It took about 20 minutes for me. Super easy! I store mine in a small mason jar . I love mason jars. You can never have enough. I think it should keep for a couple of weeks. I keep mine on the counter top. You can store it in the fridge, but it will harden slightly. That’s it! Enjoy!

Healthy Key Lime Tarts (Vegan and Paleo)

Healthy Key Lime Tarts.  One of the things I think of during summer is healthy key lime tarts.  I knew I had to find a way to make a healthy key lime vegan tart recipe.

My father-in-law loves all things key lime and he loved this key lime tart recipe!  I had him come over and taste test them.  If you like my Key Lime Larabars, you will love these key lime tarts!

      Healthy Key Lime Tarts

I had soaked some cashews because I was making some Smoky Sweet Potato Tacos and the recipe called for a maple cream.

I thought they were plenty sweet and didn’t end up making the cream part.  The tacos were bomb though!

I used the extra cashew cream in this recipe. These little tarts are vegan, grain free, gluten free and raw.  I hope you enjoy them as much as we did.

      Ingredients

        For the crust

        For the filling

        Instructions

          For the crust

          1. Soak the cashews overnight and then drain and rinse.
          2. In the food processor , grind up the salt, almonds and pecans until they are a course/crumbly texture.
          3. Add the dates and pulse until a dough starts to form. You may need to add a couple tablespoons of water or oil if the dough is not holding well.
          4. Press the dough into individual greased tart pans . I have the kind with the removable bottoms. Makes it real easy to remove them afterward. I got five out of my batch. It helps to use wet hands while forming the dough into place.
          5. Once all the dough is formed in the cups, place in the fridge for 30 minutes to firm the dough back up.

          For the filling

          1. While the dough is firming back up, you can start on the filling. Throw the cashews, coconut milk, sweetener and lime juice in a blender and blend until smooth. I used my Vitamix . Take a taste. If you like it a little more tart, add some more lime juice.
          2. Pour the contents into the tart shells and let chill in the fridge for a couple hours. That’s it!

Coconut Almond Fudge (Vegan and Paleo)

Coconut Almond Fudge.  I thought I would never again enjoy a sweet bite of indulgent coconut fudge eating a clean and vegan diet. Who doesn’t like fudge?  It literally melts in your mouth with it’s velvety texture.

The minute I had my first taste of coconut butter, I knew I could find a way to make it vegan AND clean. Introducing my Coconut Almond Fudge.  This fudge recipe is truly for coconut lovers!

          coconut almond fudge

This coconut almond vegan fudge is so good.  If you like my Coconut Truffles, you will love these!  The best part?  They fit almost every diet.  They are grain free, gluten free and vegan.  If you have a nut allergy, you can try making them with sunflower butter.

I am sure they would be great that way too!  I used chocolate molds to set my fudge, but mini muffin cups would work great too!  If using mini muffin cups, please use a paper or silicone wrappers so they can be easily removed.
