Almond Joy Granola Recipe

Almond Joy Granola.  I have been slightly obsessed with coconut lately if you haven’t noticed.  You need to try this Almond Joy Granola!   What’s not to love?  I was not always a coconut fan, but have grown to love it in so many ways.

I already have Almond Joy Energy Bites and Almond Joy Waffles, so why not create Almond Joy Granola.  I have combined my love for coconut, with my love for granola to make this very tasty little snack.  This almond joy granola is a must try!

This is so good!  It may just be my new favorite.  I have to admit, though, this recipe was not going to be granola.  I was trying to do a baked oatmeal and when I went to pull them out of the muffin tins, they just fell apart.

But rather than toss it, I just threw it back in the oven for another 15 minutes and made it granola!  Glad I did too, because the coconut got toasty and sweet.  Yum!

Prep Time 10 min Cook Time 15 min Serves 2.5 cups     adjust servings

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl . Mix wet into another.
  3. Add wet to dry and mix until combined.
  4. Spread mixture onto a lined baking sheet .
  5. Bake in the oven for 17 minutes.
  6. Pull out and shake granola around and put back in the oven for another 15-17 minutes. Enjoy!

Raspberry Coconut Muffins

I haven’t come up with any new recipes for muffins lately, so I thought I would do one.  I came up with these Raspberry Coconut Muffins and they were pretty good.  I used to not really like coconut, but I love it now.  I think it must be an acquired taste.  Or maybe it was my Coconut Cream Larabars that got me hooked!

I made these with more of the white whole wheat flour.  I am really liking it although I still would like to use spelt as well.

Prep Time 10 min Cook Time 30 min Serves 5 large muffins     adjust servings

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl. 
  3. Mix all wet ingredients in another. 
  4. Add wet to dry and fold in the raspberries.
  5. Spoon batter into a greased or lined muffin pan. I used jumbo muffins for this and I only got 5 muffins, but if you are using standard sized muffin tins, you will most likely get about 10-12.
  6. I baked my jumbo muffins for about 30 minutes. If you are using standard muffin tins, you will probably bake them around 15 minutes or so.
  7. Let cool before removing from pan.

Strawberry Banana Baked Oatmeal

Strawberry Banana Baked Oatmeal. If you have been reading this blog for a while, you have probably realized that I love oats.

That is why I have so many granola recipes on the blog.  I also love to bake, much more than I like to cook.

This strawberry banana baked oatmeal is just one thing I made the other day.  It’s so good and a great way to eat oatmeal on the go.

I love making big batches of baked oatmeal that I can pull out of the freezer for quick breakfasts.  The strawberries and banana go so well in this baked oatmeal recipe.

This dish was inspired by my Apple Cinnamon Baked Oatmeal.  It came out even better than I imagined it would.  These would be great for those breakfasts on the go.  They taste especially good warm and right out of the oven.

  4. Add wet to dry and spoon batter into greased muffin pans and bake in the oven for around 20 minutes.

I used jumbo muffin pans and filled them about halfway. I got about 6 single serving baked oatmeals out of my batch. You may want to double it if you would like more to stick in the freezer.

Quinoa Pine Nut and Chocolate Chip Cookies

I love quinoa.  Up until now, I have always used it in savory recipes.  I had heard of people making cookies with it, so I wanted to try.  This is my first attempt and I think these quinoa pine nut and chocolate chip cookies came out pretty good. The earthiness of the pine nuts and the sweet bitterness of the chocolate combine really well with the sweetness of the dough. This chocolate chip cookie recipe is a must-try.

These cookies are hearty and high protein.  Quinoa is a great food for vegans because it is a complete protein..  One cup packs 8 grams of protein.  Also, when you add in the oats and pine nuts that is a heck of a lot of protein in these little cookies.  If you subbed the chocolate chips for dried fruits, you could probably make these a decent little breakfast cookie as well.  🙂  They are kid approved too.  Meadow has been sick the last few days, but she still taste tested them and gave her approval.  I swear that kid will eat anything in cookie or donut form.  For another cookie recipe, click here.

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in a large bowl .
  3. Mix the wet in a smaller bowl .
  4. Add the wet to the dry.
  5. Fold in the chocolate chips and the toasted pine nuts.
  6. Drop cookies onto a lined baking sheet and bake for 13-15 minutes. Enjoy!

Pumpkin Spice Breakfast Cookies

I have some pumpkin spice breakfast cookies for you! Cookies are great any time of the day, but it’s awesome when you can eat cookies for breakfast!

No need to feel like you are cheating with these healthy pumpkin breakfast cookies.  They are healthy!

I created this dish because I had some leftover pumpkin from my chocolate covered pumpkin donuts.  Breakfast cookies are great for the mornings when you are too busy to make breakfast.

They travel well too, so pack them with the kids for a breakfast on the go.  These pumpkin spice breakfast cookies also freeze well so feel free to make a big batch and freeze some.  That is what I do.  So here you go.
