Pumpkin Chai Donuts

I am just loving the flavor of these pumpkin chai donuts!  I have been into all things chai flavored lately.  First there was my flourless chai sandwich cookies and then my coconut vanilla chai ice cream. Now these delectable donuts.  These are vegan and gluten free.   The chai flavor was perfect with the pumpkin. I hope you enjoy it as well. If you are not into chai flavors, but love pumpkin, you can always make these muffins instead.

Lemon Blueberry Donuts

I love combining lemon and blueberry together.  That is exactly what I did to make these Lemon Blueberry Donuts.  In addition to adding lemon and blueberry, I also added a creamy coconut frosting.  Coconut also goes very well with lemon and blueberry.  You can never have too many donut recipes, right?  Especially when they are healthy donut recipes.  My kids were trying to sneak bites of these lemon blueberry donuts as I was trying to take the picture!  The life of a food blogger mom!  If you also like lemon and blueberry, you may also like my lemon blueberry ice cream or my lemon blueberry cookies.

This healthy donut recipe is vegan and gluten free.  I used fresh blueberries in my recipe, but I bet you could also use frozen blueberries.  Just let them thaw before using in this recipe.  I think this healthy donut recipe would also be good with strawberries or raspberries!

Double Chocolate Donuts (Vegan and Gluten Free)

Double Chocolate Donuts.  My husband and older daughter love all things chocolate.  I am more of a vanilla girl.

I made these chocolate donuts for them.  Most of my donut recipes can double for breakfasts, but this recipe is extra indulgent and better as a dessert.

These chocolate donuts are almost like a brownie in donut form.  I was excited to make these chocolate donuts because I got to break out my heart shaped donut pans.

Healthy Red Velvet Donuts (Vegan)

Healthy Red Velvet Donuts with no artificial dyes! I have been wanting to try making red velvet donuts for a long time.  So yesterday I took the plunge and they came out great.

Most red velvet cakes, muffins, and cookies are made with artificial food dyes.  Artificial dyes are a deal breaker for me. Did you know that a traditional red velvet baked good does’t even call for food coloring? It really is all about using the cocoa powder and the vinegar together.

Maybe it was all about my handy prep cooks I had helping me.  I bought Meadow and I matching aprons and she is too stinking cute wearing hers.

She was really just fascinated with the spoon.  It’s funny, you buy your kids all these toys, but really, they want to play with stuff you have lying around your house.

Every parent knows exactly what I am talking about.  Give kids a cardboard box and they will play for hours!

Red Velvet Donuts

Healthy Red Velvet Donuts

Prep Time 10 min Cook Time 10 min Serves 7 donuts     adjust servings

Ingredients

  • 1 1/2 cup spelt flour
  • 2 T coco powder
  • 1 egg (I used flax)
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/3 cup yogurt (I used coconut)
  • 1/3 cup milk (I used hemp)
  • 1/3 cup coconut sugar
  • 1 tsp vanilla extract
  • 1 tsp vinegar
  • 1 T coconut oil
  • 1/4 cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350.
  2. Mix all the wet ingredients in one bowl.
  3. Mix dry ingredients in another bowl.
  4. Add dry to wet.
  5. Spoon batter into greased donut pans and bake for about 10 minutes.
  6. Let cool completely before removing from the pans.
