If you wanted to use another nut, I think you could.  I could see hazelnuts being a nice addition too.

  1. Okay, this sounds really good, but being the thrifty person that I am I hate to throw out good food....especially expensive food. What do you do with the rest of the coconut milk now that you've taken all the fat out of it. I just can't see myself throwing it away. Thanks.
    1. Its yummy in smoothies! :) I also mix some with OJ to make a "fancy" drink lol and its kinda like a virgin malibu and orange - if you blend with a few ice cubes you have an orange julius-type drink lol (I am pregnant and have to get creative sometimes ! LMAO!)
  2. I have this in my mixer about how long does it take to become a mousse I it s been on for about 5 min an still looks like chocolate milk
    1. Did you use full fat canned coconut milk that had been refrigerated overnight? IT should whip up pretty fast? What kind of milk did you use?
    2. FYI I didn't have a mixer so I blended it and then put it back in the fridge. I added some chia seeds too and it was very thick after an hour in the fridge. Will try without chia and see if it also thickens back up, I imagine it would!
  3. Delicious and super easy! I added a little almond butter and sliced bananas after it was whipped, but it was delicious as is as well. Will definitely make this again!
  4. Yessss! Yaaaaaaas! Eating this as I type and feeling oh so fancy! Do you think this would freeze up into a smooth ice cream very well?
    1. Yay! It might freeze well! I haven't tried, so let me know how it works if you do. Ours is always gone minutes after we make it haha!
    1. Sara, your Vitamix will whip up the fat off the top of the coconut milk very quickly. You can then save the leftover water from the coconut for a Vitamix smoothie or freeze in an ice cube tray and add a frozen banana or two to make an ice cream/sorbet dessert.
  5. Just wondering about how much do you think the cream from canned coconut milk measures out to be? I have a full can of just coconut cream so want yo use this if I can. I imagine that will give me enough to possibly double or even triple this recipe :)
  6. Not having any luck with this recipe... I bought full fat coconut milk & refrigerated for over 3 days before trying to make this. There was nothing but the milk in the can and after 10 minutes of whipping it's still like chocolate milk. Bummer... I'm going to try freezing the mixture for an hour and then whipping.
    1. Sorry you are having an issue. :( What brand of coconut milk did you buy? Every once and awhile I get a can that is a dud and it will not solidify. Maybe that's what happened?
