These nut free cookies only take minutes to make and taste super good. I made them with sunflower seeds. You can use this nut free cookie recipe as a base and add in whatever extra flavors you may like.

I am sure everyone is starting to get sick of all things pumpkin these days. I have been wanting to make these no bake vegan gingerbread cookies for a while now and I’m so glad I did. They are AMAZING!
These delicious no bake vegan gingerbread cookies are seriously easy to make. This is a cookie batter that’s safe to eat. These no bake paleo gingerbread cookies are also gluten free, grain free and vegan. Can it get any better?

No Bake Gingerbread Cookies
No Bake Gingerbread Cookies
Ingredients
- 2 cups raw pecans (another nut may work as well)
- 10 medjool dates (pits removed)
- 1 tsp cinnamon
- 1 tsp ginger
- 1/8 tsp nutmeg
- 2 tsp ground vanilla beans or 1 tsp vanilla extract
- 1 tsp blackstrap molasses (You can omit it, but the taste will be slightly different)
Instructions
- In the food processor , grind the pecans.
- Then add in the remaining ingredients and pulse until a dough starts to form.
- Roll into balls and place on a parchment lined plate in the fridge to firm up.

Chocolate Peppermint Truffles. This time of year makes me think of chocolate. So how about some chocolate peppermint truffles? Truffles, cookies, brownies to name a few. It seems like there are always sweet treats going around at parties.
I have been trying to come up with cleaner versions. This chocolate peppermint truffle recipe is another one of those. Only 4 ingredients and just a few minutes!
I got the idea for these peppermint truffles after making my Chocolate Pistachio Truffles. These healthy truffles are so good and they just melt in your mouth.
The best part? They can literally be made in minutes! I used to think truffles were hard to make, but this recipe proved me wrong. It couldn’t be easier.

Chocolate Peppermint Truffles
Ingredients
- 1/2 cup pecan butter (almond butter may work well too)
- 1 dark chocolate bar (I used Endangered Species 3.5 oz)
- 9 medjool dates (pits removed)
- 1/2 tsp peppermint extract
Instructions
- In a food processor , combine all the ingredients and blend until a dough starts to form.
- Roll into balls and place on a lined baking sheet.
- Store in the fridge to firm them up. About 20 minutes. I got 10 truffles out of my batch. Enjoy!
Cashew Cookie Larabar Bites (Vegan)
Cashew Cookie Larabar Bites. So I have almost made every single larabar flavor there is now. They are just so easy and taste way better than the store bought versions.
I made the Carrot Cake Larabars the other day and my baby girl loved them so much! This is huge because she has a G tube and eats a lot of her food through that.
So to have her interested in orally enjoying those snacks was a big deal. I have had many requests for the Cashew Cookie flavor so I whipped them up today. I added 1 extra ingredient that I think takes these to the next level.
The ground vanilla beans really perk this recipe right up. They are so good! You can also use vanilla extract, but I would only use 1 teaspoon instead of two.

Cashew Cookie Larabar Bites
Ingredients
- 1 1/2 cups raw cashews
- 8 medjool dates (pits removed)
- 2 tsp ground vanilla beans or vanilla extract
- 2 T water
Instructions
- In the food processor , grind the cashews into a fine consistency.
- Then add in the remaining ingredients and pulse until a dough starts to form.
- Roll into balls and place on a parchment lined plate.
- Stick the balls in the fridge for about an hour to firm up. I got 12 balls out of my batch. Enjoy!
Carrot Cake Larabar Bites (Vegan)
Carrot Cake Larabar Bites. I know that you all love larabars. I have had several requests for the carrot cake bar recipe, so I thought I would create you these carrot cake larabar bites.
The flavor of these carrot cake larabar bites of reminded me of my Coconut Cream Larabars and also my No Bake Pumpkin Pie Cookies.
I checked the ingredient list on Larabar’s website and created my recipe based on those ingredients. I am hoping it tastes similar to the store bought version.
I am not a huge carrot cake fan, but my husband is. My baby daughter LOVED this recipe. That was a surprise to me. Very kid friendly. 🙂 They are also vegan, gluten free and grain free.

Carrot Cake Larabar Bites
Ingredients
- 2 small carrots shredded
- 1 cup raw walnuts
- 1/2 cup raw almonds
- 1/4 cup shredded coconut unsweetened
- 1/4 cup dried pineapple
- 1 tsp cinnamon
- 1 T coconut oil
- 8 medjool dates (pits removed)
- 1/2 tsp sea salt
Instructions
- In the food processor , mix the carrots, walnuts and almonds and coconut.
- Then add in the cinnamon, salt, dates, pineapple and coconut oil. If the mixture seems slightly dry, add in a bit of water. I didn’t have to add any in mine.
- Once a dough forms, roll into balls and place in the fridge to firm up.

I got about 12 balls out of my batch and I ended up flattening them into cookies. Enjoy!
No Bake Pumpkin Pie Cookies
I am obsessing over all things pumpkin. How about you? These no bake pumpkin pie cookies cookies are no exception. They are so good. My picky 4 year old loved them and she claims to hate pumpkin. Lol.
These no bake pumpkin pie cookies can be made in minutes with almost no dishes to do after. This is a super easy recipe you can make with your kids. These pumpkin cookies are vegan, gluten free and paleo. Can it get better? I hope you enjoy them as much as we did.
No Bake Pumpkin Pie Cookies
No Bake Pumpkin Pie Cookies
Ingredients
- 1 cup raw pecans
- 1 cup raw almonds
- 9-10 medjool dates
- 3 T raw pepitas
- 1/2 cup pumpkin (fresh or canned)
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ginger
- 1/4 tsp ground cloves
Instructions
- In the food processor , grind up the almonds, pecans, pepitas and spices.
- Then add in the dates and continue to pulse.
- Lastly add in the pumpkin and pulse until a dough starts to form.
- When the dough is formed, roll into balls and stick in the fridge for 30-60 minutes to firm up.
Recipe Notes
I rolled mine into balls and flattened then with my palm once they had firmed up. It’s an easy recipe to do with your kids. I got about 10-12 balls out of my batch. Store them in the fridge or even freeze them for longer storage. Enjoy!
