Maple Cinnamon Ice Cream with Gingerbread Cookie Dough
I know it’s winter and all, but there is always time for cookie dough ice cream! This Maple Cinnamon Ice Cream with Gingerbread Cookie Dough is perfect for this time of year.
This ice cream is very easy to make. I used my ice cream maker for this and it took about 20 minutes. Having an ice cream maker is awesome. I made my money back very quickly. Have you priced organic/dairyfree/glutenfree ice cream lately? It’s crazy. You can make your own frozen desserts for very little.
Maple Cinnamon Ice Cream with Gingerbread Cookie Dough
A maple cinnamon ice cream filled yummy gingerbread cookie dough. It's like Christmas in a bowl!
Ingredients
- 1 can full fat coconut milk
- 2 tsp ground vanilla beans or 1 tsp vanilla extract
- 1 1/2 tsp cinnamon
- 3 T maple syrup
- 1/2 tsp salt
- Handful of gingerbread cookie dough bites
Instructions
- Please make sure your ice cream bowl has been in the freezer for at least 18 hours.
- Mix all ingredients except the cookie dough, into a bowl.
- Add contents into the ice cream machine and turn on.
- Once the ice cream looks almost done, add in the cookie dough.
- When finished, the ice cream will be a soft-serve consistency.
- Place ice cream in the freezer for at least one hour if you like a harder ice cream.

No Bake Gingerbread Cookies
No Bake Gingerbread Cookies
Ingredients
- 2 cups raw pecans (another nut may work as well)
- 10 medjool dates (pits removed)
- 1 tsp cinnamon
- 1 tsp ginger
- 1/8 tsp nutmeg
- 2 tsp ground vanilla beans or 1 tsp vanilla extract
- 1 tsp blackstrap molasses (You can omit it, but the taste will be slightly different)
Instructions
- In the food processor , grind the pecans.
- Then add in the remaining ingredients and pulse until a dough starts to form.
- Roll into balls and place on a parchment lined plate in the fridge to firm up.

Chocolate Peppermint Truffles. This time of year makes me think of chocolate. So how about some chocolate peppermint truffles? Truffles, cookies, brownies to name a few. It seems like there are always sweet treats going around at parties.
I have been trying to come up with cleaner versions. This chocolate peppermint truffle recipe is another one of those. Only 4 ingredients and just a few minutes!
I got the idea for these peppermint truffles after making my Chocolate Pistachio Truffles. These healthy truffles are so good and they just melt in your mouth.
The best part? They can literally be made in minutes! I used to think truffles were hard to make, but this recipe proved me wrong. It couldn’t be easier.

Chocolate Peppermint Truffles
Ingredients
- 1/2 cup pecan butter (almond butter may work well too)
- 1 dark chocolate bar (I used Endangered Species 3.5 oz)
- 9 medjool dates (pits removed)
- 1/2 tsp peppermint extract
Instructions
- In a food processor , combine all the ingredients and blend until a dough starts to form.
- Roll into balls and place on a lined baking sheet.
- Store in the fridge to firm them up. About 20 minutes. I got 10 truffles out of my batch. Enjoy!
Chocolate Pistachio Truffles
A few weeks ago, my husband made some amazing pumpkin enchiladas. They had a pistachio dust on top. Well he ground up too many pistachios and I have been wondering what to do with them ever since. So I decided to make chocolate pistachio truffles.
These chocolate pistachio truffles remind me of chocolate ganache. They simply melt in your mouth. I think it is due to the pecan butter I added. If you haven’t tried pecan butter, you need to! Amazing stuff. There are dates in these chocolate pecan truffles, but I honestly can’t even taste or detect them at all. This easy dessert can be made in a matter of minutes. Vegan, gluten free and grain free. 🙂

Chocolate Pistachio Truffles
No fuss truffles that are melt in your mouth delicious!
Ingredients
- 1/2 cup pecan butter
- 1 dark chocolate bar (I used Endangered Species 3.5 oz)
- 9 medjool dates (pits removed)
- roughly 1/3-1/2 cup pistachios (Chopped fine or ground into dust)
- 1/4 tsp salt
Instructions
- In the food processor or blender , combine the pecan butter and dark chocolate.
- Once they are mixed well, add in the dates and salt and mix until well combined.
- A ball of dough will form.
- Spread your chopped pistachios onto a plate.
- Roll the dough into balls, then roll the balls through the chopped pistachios.
- Once that is done, place the balls on a lined baking sheet .
- Once all the balls are done, stick the baking sheet into the fridge to firm up.
